Egg fried rice. Have tried so many ways to make it (egg on its own, egg onto rice etc) and it always comes out as a greasy lump. Please please can I have a foolproof recipe?!
You can find a foolproof recipe in my complete Chinese cookbook, it's the real thing. The egg should be beaten with some sesame oil and salt and pepper, the rice should be cooked and cold. You heat up your wok and stir fry the rice until it's all heated through, then quickly add the beaten egg and stir fry until all the egg and cooked and incorporated in the rice. Add some spring onions and you have perfect egg fried rice.
