Ingredients

2 cans of black kidney beans
2 tbsp of olive oil
1 onion finely chopped
1 clove of garlic finely chopped
Salt and pepper and/or 1 chicken stock cube
Oregano to garnish
100g of parmesan cheese

Handy Hint

You could add some tortilla chips and a teaspoon of chipotle sauce

Method

1. Put kidney beans into a food processor with one large cup of water - then pass through a sieve so you are left with a nice creamy mixture
2. Fry onion, garlic in olive oil til golden
3. Add the kidney bean mixture and adjust condiments including oregano then simmer for 15 minutes

Place in soup bowls and garnish with parmesan cheese

Cost about £0.70 pence for four people - not bad dont you think?
