Ingredients225g (8oz) raspberries (more if you want)1/4 litre (1/2 pint) double cream 1/4 litre (1/2 pint) plain yoghurt 4-5 tbsp dark muscovado sugar |
Handy HintI sometimes break up meringues into the cream mixture to add a bit of texture. Other mixed fruits could be used - blueberries, loganberries, blackberries, strawberries. I often use more than half a pint of cream and yoghurt and more fruit, depending on the size of serving bowl. It's a bit of a hit or miss pud, so doesn't really matter so long as the cream and yoghurt are half and half. |

Method1. Place fruit into a glass serving bowl.2. In another bowl, whip cream until it is just becoming firm, then pour in yoghourt and continue to whip until it just about holds its 'shape'. 3.
