Ingredients

Carrots
1 red onion
12 cardamom seeds
2 lemons
1 red chilli
Root ginger
Garlic

Method

1. Finely chop the red onion and chilli
2. Open the cardamom pods and discard the shells (just use the seeds from inside)
3. Crush the garlic (I use around 3 cloves) and grate or chop the root ginger (I use around 2.5cm/1" chunk) and squeeze the juice from 2 lemons. You can add a little olive oil if you wish.
4. Fill a large bowl with grated carrots and add other ingredients to your own taste.

This makes the tastiest salad ever and is a great diet food!
