Ingredients

For two people:

one leek
cabbage for two
half teaspoon turmeric
half teaspoon jeera (ground cumin)
salt

Fat for frying in a wok; I use lard and unsalted butter. I guess ghee would work really well.

Handy Hint

Some pine nuts chucked in with the cabbage makes a nice variation. Or bacon bits. Recipe goes really well with chicken risotto.

Method

Heat your wok gently and melt some lard (or your preferred fat) in it while you chop your leek—slice and then criss-cross the slices roughly.

Chuck leek in wok and toss it about. Add some turmeric and ground cumin and toss about some more.

Chop the cabbage and add it plus some salt to the wok.

I put a lid on my wok at this stage and let everything 'soften down'. Add some butter if it's a bit dry. You can crisp things up a bit with more heat if you like.

If you like chili I'm sure it would work, as might other spices. I find the turmeric and jeera sufficient.
