What's for lunch ?

My dh has now retired , and I'm finding that he wants something at lunchtime, but more often or not doesn't know what. Thankfully he's not the sort that expects me to present it to him and will more often or not get something himself. Any ideas ?
We are not particularly fond of too much bread.

GrandmaKT - Scottish oatcakes, preferably Orkney ones (which I stock up with when we go on holiday).

I like rhubarb, too, especially in a crumble (I make the crumble with a proportion of bere meal, also from Orkney).

We have our main meal at 6ish, as we both work. I'm home for noon, though, and today I had some granola with yoghurt

I poach rhubarb in port or roast it with sugar and ginger.
I love Brussels sprouts and offal and rabbit....all stuff DH detests.
Can't help with lunch suggestions as ours revolve around bread and meat. Soups, salads and stir frys spring to mind.

Me too Pittcity I love rhubarb, gooseberries etc much better than sweeter fruits. Also rabbit, liver etc

Paprika chicken breast with raw chopped peppers and some home picked raw red cabbage. And a cup of Yorkshire tea.

Sardines/poached eggs/scrambled eggs/ Welsh rarebit on toast. I try not to have more than one slice of toast but sometimes give way to temptation.

DH makes himself a salad most days.: lettuce, tomato, beetroot, cucumber, sometimes potato salad or coleslaw. With it he has mashed sardines or crustless quiche, or hard boiled egg and some cheese, no bread, sometimes a jacket potato. All very healthy.
I have a sandwich. With lettuce and red and yellow peppers. I love bread, and salad makes me go to the loo too often. TMI.
On cold days I have soup, or poached egg on toast.

We usually have cup soup and a sandwich, followed by an apple. Today we had mushrooms on toast. The mushrooms were 20p from Tesco reduced section. One or two were a bit battered but they were jolly tasty and at 10p per generous serving we were very pleased.

I see they are called 'party pan' squash in UK. Here, it's 'patty pan' but they are hard to find these days.

Foods in the BL72 house

I tossed enough chopped parsnip, buttercup squash, kumara, carrots and a potato in a plastic (horrors, shoot me at once!) bag containing 1/2 tsp oil.
Enough for 2 meals.

These I roasted with garlic then ate some with a mixed, crispy salad (iceberg lettuce, shredded cabbage red and white, carrot).
I rarely roast things but particularly like hot and cold foods together.
The rest of the squash and carrots I made into soup.

This is quite heavy on the carbs but I can go days without eating any carbs at all.
The bread I buy is about $15 a loaf (£8) so it is eaten very sparingly and lasts at least month.

The rest I may eat tomorrow with leek sauce and a sprinkling of cheese.
Protein will come from a boiled egg, tomato, cottage cheese and avocado at teatime (4pm).

I don't eat meat, although I will cook it for my son.

When he spent the day with me on Saturday, I made chicken breast stuffed with a schmear of cream cheese, sun-dried tomatoes and finely sliced chorizo.
Wrapped it in bacon and foil and baked it.
Served this with potatoes, broccoli with the rest of the mushrooms.
I just ate the veg part.

I had intended making rhubarb and apple crumble but we were both too full. smile So today I had a portion of the fruit with coconut yoghurt for breakfast.
The rest I froze against the next family visit.

Not very inspiring I'm afraid.

I think they are referred to as 'patty pan squashes' in the UK as well. I not seen any squash referred to as a 'party pan' squash. Googling it produces only a correction to patty pan.

Gosh BradfordLass I'm really impressed! I avoid cooking like the plague! at work today, and had hummus baguette with roasted peppers - yum! - and tonight will probably be beans on toast, or shop-bought fish pie, I'm afraid..

As you don't eat meat and very little bread, have you thought of
Googling Low Carb Lunches, I've had a look and there are lots of suggestions.
