What is that pudding with whipped egg white and some sort of cereal milk pudding base, also has red berries mixed in. It's very light in texture. How is it made?

Auntieflo Sun 01-Apr-18 23:03:54

Alexa, I thouht you knew everything. smile. Sorry, couldn't resist it. But I don't know what it is, hope someone can help.

Do you mean like a floating islands dessert?

Aubtieflo, Goodness is it still happening now I'm an old woman! My nickname at school was Brainbox grin

hildajenniJ Sun 01-Apr-18 23:46:57

You don't mean cranachan do you? Scottish dessert made with raspberries, cream, honey, whiskey and toasted oatmeal.

Alexa Sun 01-Apr-18 23:52:06

No Hilda, I'm sure there was no oatmeal.

Sorry about the typo Auntieflo .

Alexa Sun 01-Apr-18 23:55:52

I just remembered I think the whipped egg white was toasted after being added to the pudding.

I don't know the name of the site. But you can input the ingredients and it will tell you what you can make with them.

Queen of puddings? ?

Eloethan Mon 02-Apr-18 01:44:49

I also think it sounds like Queen of Puddings, although my recollection is that there is jam, not berries, in Queen of Puddings.

annsixty Mon 02-Apr-18 07:18:44

Doesn't Queen of Puddings have breadcrumbs in milk as a base spread with jam and then meringue?
I think that was then lightly grilled.

Auntieflo Mon 02-Apr-18 08:43:44

My first thought last night, was Queen of Puddings, but there is no cereal milk pudding in it, so it could be! Alexa, you're a sport , thanks for taking my leg pulling as intended, and not as a slight.( Gransnet as it should be).

Greyduster Mon 02-Apr-18 08:50:28

The only pudding I know with meringue on the top is baked Alaska, but the centre is ice cream and fruit and is supposed to stay frozen. The first time I made it it didn’t so would have fitted your description grin!

hicaz46 Mon 02-Apr-18 09:04:39

It does sound a bit like Queen of puddings, but as said before that is with breadcrumbs. And coincidentally I'm making one for lunch, with friends, today!

tingaloo Mon 02-Apr-18 09:18:28

I thought Queen of Puddings as well. One of my absolute favourites, I haven't had it in years.

Sue56 Mon 02-Apr-18 09:33:10

Could it be Queen of Puddings with a meringue topping and a base made of white breadcrumbs made into a sponge using the egg yolks and milk/cream then topped jam? Totally delicious

gran5up Mon 02-Apr-18 10:27:21

Queen of Puddings as made by my Mum, hence the English measures:

Half a pint of milk
1 oz butter
2 and a half oz white breadcrumbs
2 tablesp castor sugar
2 eggs
1 tablesp jam
Splash of vanilla if liked

Boil milk + butter, pour over crumbs, add 1 tablesp sugar
Leave to stand while you separate the eggs, beat the yolks then add them + vanilla to the crumbs
Pour into a buttered dish, cook at gas mark 5/190 C/175 F for 30 mins
Take from oven. leave to cool a bit until set
then spread the jam over
Beat egg whites with remaining sugar, pile on top of pudding, place on bottom of oven 20 mins or so to brown meringue
Serve hot or cold
Enjoy and says thanks to my old Mum, Joan!

Could it be Eaton Mess?

Situpstraight Mon 02-Apr-18 11:11:52

It’s the cereal milk base that has me puzzled.

merlotgran Mon 02-Apr-18 11:15:00

Sorry to say it sounds revolting. grin

Welshwife Mon 02-Apr-18 11:19:39

It is actually nice despite how it sounds Merlot. - it can’t be Eton Mess as that uses meringue, cream and raspberries.

oldgaijin Mon 02-Apr-18 11:28:32

Definitely Queen of Puddings or, even better, lemon QoP.
It's fine white breadcrumbs set in an egg custard, spread with straw/raspberry jam and covered with meringue. Brown gently in oven...yummo! Try the BBC food website for recipe.

nettyandmasey Mon 02-Apr-18 11:31:23

I would say Queen of Puddings.

Nandalot Mon 02-Apr-18 12:08:03

Yes, Queen of Puddings, the breadcrumbs would make it taste a bit cereally.

Nandalot Mon 02-Apr-18 12:11:03

Just looked up the recipe on google and Mary Berry’s recipe uses fruit as one option.
