cod and haddock fillets

Husband likes white fish but I find them dry and tasteless unless battered and fried.
How do you cook them?

Tonight I'll be eating poached haddock topped with poached eggs with boiled new potatoes and peas. Knob of butter over.
Haute cuisine it ain't but it's tasty enough, lots of protein there. It'll do.smile

Put some sliced tomatoes on top and a knob of super healthy spread; wrap in foil and bake. The tomatoes cook and form steam so the fish stays moist.

Put fish in steamer after covering in seasoning and herbs or whatever takes your fancy. I cook the potatoes and veg underneath in the water.

Place flaked fish in fireproof dish - add seasoning and bouillon powder - cover with plain yoghurt - cover with instant mashed potato (with or without grated cheese) - pop in oven.
