Can anyone tell me please if coconut flour can be used in everyday recipes, as any other flour, and would the quantities be the same? Thank you.

I bought some thinking I could mix with H2O to replace coconut milk.Looked for recipes to use it. It has been sat in storecupboard for months not yet used.

This afternoon I found coconut flour (organic) in a large supermarket but was surprised at the cost- £3.75 for 500gms so much more expensive in comparison to regulat wheaten flour.
Anyway I thought I'll give it a try, perhaps use a one in three ratio with the other flour and see how it works.

Hi all
Thought I'd give all you bakers an update on my efforts to use coconut flour.
I made some small cakes today, a bit like scones, and added one part coconut flour to three of plain wheat flour, I used some yogurt and water to moisten and am very pleased with the results, light and flavoursome.
They were just out of the oven when DS3 popped in, enjoyed three of them(they are small) saying they were delicious. So I will be using it again in baking cakes.
