gillybob really simple - 1cm dice potatoes fried in a small amount of olive oil. When tender stir in a knob of butter, thinly sliced shallot, lots of chopped parsley and salt and pepper. Leave to stand for a couple of minutes to allow the shallots to soften. Lovely!!
