Do you like beetroot?

According to Michael Mosley it's the latest superfood - good for our brain and can make us run faster!

And relatively cheap compared to blueberries and avocados.

I really like it but have to admit have never cooked it from raw - I buy it the vacuum packs.

Beetroot

I live on it but I still can't run! wink I make a Beetroot jelly with a sugar free blackcurrant jelly made with 1/2 vinegar, half water. I add beetroot, blanched red onion and blackcurrants and let it set. It makes a wonderful addition to salad and with only the Syns to count in the jelly (2), it it great if you are on the Slimming World Plan.

I bought some Beetroot coleslaw in Marks one day and realised that I could do the same which would be so much cheaper.
Grate cooked beetroot, some carrot, red onion, and an eating apple. Moisten with 1 teaspoon of horseradish and some mayonnaise until it's the consistency required. It will last in the fridge for about 5 days.
I think it is very tasty

My favourite ways to eat beetroot are (1) wedged and oven roasted, (2) beetroot and rhubarb ketchup <––– dead good with macaroni cheese.

Riverwalk, I love beetroot - especially as a hot vegetable. I tend to bake or microwave it, with the top and root removed, sometimes sliced, but skin left on. I don't have the patience to boil and then peel it. I don't care if it 'bleeds' as I'll drink the juice (I keep and drink all the veg cooking water for the vitamins and minerals).

Todays lunch

Cold roast beef left over from a roast on Tuesday, green salad, jersey royals, home made pickled beetroot and home made mayonnaise.

Cook in oven wrapped in foil, tasty or cover hand and grate it raw, very tasty.

I forced myself to drink the juice when this came out from the British Heart Foundation www.bhf.org.uk/what-we-do/news-from-the-bhf/news-archive/2015/january/beetroot-and-blood-pressure but have to confess I haven't persevered!

I’ve grown Choggia this year, which looks ( on the seed packet) to be both white and purple rings inside.
Also Boltardy normal beets.
We are a beet loving household here, easy to grow, delicious and good roasted, pickled, also makes a lovely spicy soup.

Often when people say they don’t like beetroot they are referring to pickled beetroot. Such a shame they are unaware of the taste and health benefits of non pickled beetroot.

Tried it all ways Esspee to satisfy those around me and I still hate it.

We love it. Boiled, roasted, juiced and a favourite is Baxter’s baby beets which I enjoy straight from the jar to snack on.

I loathe pickled beetroot. I do, however, like plain boiled/roasted beets, cold or hot. Don’t enjoy goats cheese, so that salad is a big Nono for me.

Love it! Served anyway- grated raw, cooked, pickled or chutney.
Started eating lots when pregnant and have never stopped
