Things to do with sweet potatoes

It's a long story, but I am overrun with them, and wondering what to make with them.

Any suggestions, please?
P.S I don't like cooking.

I know.
She's 95 though.
She loads me up with everything she doesn't want.
I barely make it to the bus stop some weeks.

I think I might see if there are any potato salad type things I can make with them.
Not sure I'd like it, but as someone says, it's such a waste if they don't get used.

I wouldn't be spending time and fuel cooking something I don't really like - I assume you've already tried to bribe your GS to have some!

You're gonna have to get tough and refuse - after all she's just passing on the problem to you!

I bake them and then soup them. Not as good as proper baked potato soup but I tend to make soup from whatever's around. They make a good bulker along with butternut squash for stews and soups etc. They are good curried, even gently curried: plenty of cumin does a lot for them.

I bake them for my elderly dog who is recovering from Pancreatitis. He has a mixture of Sweet Potato, Pumpkin Purée, ground Turkey and all mixed together with some baby food. He is thriving on this low fat diet.

I like sweet potatoes now and again, I bought some a few days ago already cut into wedges, so I added a drop of oil and put them in the oven. I added a bit too much oil and they were
oily/soggy and went into the bin.
One of my favourite ways is adding them to one of my winter soups with onions/carrots/turnip my soup always thickens up
and is delicious with some crusty bread. I suddenly feel hungry.

You'll just have to tell her that, although you like them, your DGS isn't keen and you have plenty to keep you going.
Someone else might be glad of them.

You can have too much of a good thing.

I used to drop them into a nearish food bank, secretly, but it means I miss my bus and have to walk quite a way, and I'm not very energetic lately.

Chop them up small best to roast them first to firm up. Then add to chilli cottage pie ragu curry soup or stews. Bake them in the oven and fill them with your favourite fillings. You can roast them and add them to chick peas to make houmous.
Grate them add them to grated potato other veg and herbs put into tea towel to squeeze off excess water. Add flour baking powder egg and seasoning fry in a little oil finish off in then oven there you have latkes.
I just made a batch with herbs and greens from my veg patch.

I'll try to remember and precis it:

Riverwalk is that why pub sweet potato chips are nice and crispy but even the frozen ones cooked at home are soggy?

Spicy soup with coconut milk
Freeze some
Saves cooking next time

Otherwise, MissAdventure, pass the parcel, when the music stops someone gets landed with a bag of sweet potatoes.

Although I'm not keen on them I do use them sometimes just for variety. Usually add them to spicy pork casserole.

I've tried that, but she gets offended, as does the person who buys them for her.
It's a bag a week.
In the winter I mash them with stew, but now I'm at a loss.
She still makes me take them even if I decline, and says I can find someone to give them to.

I can never get them to go crispy either. I m not keen on the taste but hate waste and my niece gave me a bag of frozen ones . We added them to a vegetable curry. Texture was fine and curry hid the flavour

I made a very good sweetcorn and sweet potato chowder in my ninja foodi last week. You could just as easily make it on the hob, or in a slow cooker.
The ingredients were sweetcorn kernels, 2 sweet potatoes, onion, vegetable stock and milk. I also added a pinch of cayenne pepper and thyme. I didn't add as my salt as I find stick cubes salty enough.

I know what you mean, Chew.
My boy won't touch them, but I have a weekly bag given to me (by someone who is given them, but can't stand them!)
I don't like to waste them, even though I'm not ecstatic about them either.
