It's 09.30 and my thoughts are turning to lunch.

Jazz dance class later so will have my usual smoked salmon and scrambled eggs - something light to keep me light on my toes!

No idea about tonight... maybe salad, something from the freezer, odds & sods from fridge, who knows smile

Posh nosh?
Spicy chicken and rice with salad for lunch - early today as we had the GCn here.
Bread and cheese (Cheddar) for tea.
Tomorrow we'll revert to our usual weekday routine of bread and cheese for lunch and something 'cooked' for tea, salad with smoked mackerel probably.

Lunch was 2 rice cakes with thin sliced light cheese and tomato ! Bbq at my sons tonight , 1 sausage 1 kebab and salad ! Trying to get rid of the 2 stones I've put on since having chemo and steroids last year . It's hard going !

We were taken out for lunch, I had lambs liver, onions and bacon on a bed of bubble and squeak followed by Eton mess. Lovely pub in the New Forest, lovely it was, that’s me for the whole day.

Brunch - Oatcakes with tomato, cucumber, slivers of Edam.
Evening meal - Two M&S hot-dog type sausages cooked in oven with sweet potatoes, carrots, onions, chestnut mushrooms and cauliflower, served with broccoli and petit pois.
East Scotland, just pleasantly warm here.

Cereal for breakfast, (Mr C had a bacon sandwich and nothing at lunch time) an orange for me at lunch time, paella this evening followed by raspberry cheesecake with some almost defrosted raspberries on top. There was also at varying points a couple of digestives with a cup of tea and an ice cream in the garden. Tomorrow and Tuesday it will be salad, salad and more salad. No cooking for sure.

Watermelon, feta, chilli and mint salad was fantastic!
I omitted the pickled onions and used some salad leaves from the garden.
It went perfectly with the spicy chicken we bbqued.

Lunch will be moussaka ? & Greek salad; dinner curried chick peas ? & a big dollop of minted yoghurt.

Both from the freezer - this is when batch cooking comes into its own smile

Slice of toast and a nectarine for breakfast. Lunch? Whatever falls out of the fridge if we want it. This evening Mr C has asked for a burger and salad, I’ll have a salmon salad. Berries and Greek yoghurt for pud. It’s all my sort of cooking smile.

For lunch today, burgers and salad. As for tea, I haven't given any thought to that.

Do you grate the courgette, Whitewave?

Lime and Courgette cake is delicious but I'm not going to be doing any baking!

Callistemon21 Mon 18-Jul-22 10:20:43

DH just brought in 5 more courgettes!
I already have 2 in the fridge.

Courgettes anyone?

Hetty58 Mon 18-Jul-22 10:25:46

Knowing the heatwave was coming, I've various pre-cooked and chilled options in the fridge. I might microwave something later but there's absolutely no way I'm warming the house by using the cooker. Chilled beans (the tin's in the fridge) with salad for lunch and maybe a curry for dinner - along with fruit salad, cold roasted veg and ice cream for snacks!

Redhead56 Mon 18-Jul-22 10:54:33

I too have lots of courgettes delicious with spinach in an omelette with cottage cheese for lunch. Left over roast chicken and veg fried rice for tea and lots of watermelon.

Gabrielle56 Mon 18-Jul-22 11:03:52

Here Oop north were having jam butties for breakfast:chips and scraps for dinner washed down with some Aldi pop;tea tonight(dinner to the southerners?) We're having a Gregg's pie with chips mushy peas and gravy with 2 or 3 pints of full strength to keep hydrated.......... Gosh! Did I say that?! We're having mackerel salads for lunch .salmon in dill and cream sauce with tagliatelle and lemon and lime individual trifles (ALL made from scratch by me) I'm also making some french style vanilla slices this evening soon as cool enough to use oven. And choux buns to freeze. Just an average menu for an average couple who live in an extraordinarily beautiful region, north west England.
