Tonight, we're having steaks, I don't get them often but M&S were all out of a Saturday favourite, Chicken Kyev. With those, Jersey Royals with chives from one of my garden herb pots and a dollop of butter. Plus salad a nod to healthy eating, sort of!
Olive bread with mozzarella and tomato salad for lunch. Dinner will be burgers with onions etc and a side salad. I may have to add a couple of Border dark chocolate ginger biscuits because they were on offer this week.
Brunch at 12’ish was wheat biscuits, blueberries, prunes and tinned mandarins. Dinner will be spatchcock chicken, sprouts, parsnips, cauli and roasties for MrJ. We only eat breakfast if away and rarely desserts.
A stir fry of Ainsley Harriot roasted vegetable cous cous, onion, mushrooms, red pepper and baby corn with hot-smoked salmon flaked in. Easy one pot meal.
My menu for the next couple of days is very varied as I am using up either left overs or things coming to the end of the Use By dates. Today I have just had a left over ham sandwich from yesterday with a mug of tea. Lunch is a half portion of left over roasted vegetable lasagna from last night with a few left over baked beans. Tonight is crustless quiche, the veg lasagna, salad and new potatoes. The quiche is just over the use by date so needs to be cooked and eaten. The roasted veg lasagna was a Waitrose microwave ready meal and was excellent. Although it looks like a single portion it does me twice with extra veg or salad...or baked beans.
Mine often leaves me. After nearly 60 years of cooking it should be no surprise really that it gets a tad boring.
I plan my meals for the week as I get a shopping delivery once a week. I do try to mix in some really easy recipes or ready meals and do these when I either can’t be bothered, been out for the day or whatever.
Tonight will be, pork medallion with tenderstem broccoli, mushrooms,apple rings, tomatoes, sauted potatoes and onions. It's all in the oven bubbling away
