Sugar...

Hi all, I have a wedding and a holiday in September and I would really like to get in better shape - I was wondering if anyone has somehow managed to give up refined sugar and if so what were the effects?! Thank you grin

While I like courgettes I must say I too was tentative. But you would never know if you hadn't been told and it is SO good. Not too sweet. And contrary to popular opinion I'm not a huge cake eater. Baker yes, but my vices are mainly chocolate. Or Ice cream. Or cheese and onion crisps.

Thanks, that is great. And even 1000s better, no egg cake, so will be great to try on GS who is higly allergic to eggs. Hurrah- merci.

I'm pretty sure that I put a courgette cake recipe on our recipe section years ago. The courgettes make a nice moist texture.

That does look very nice. Might try that tomorrow. If Waitrose has got courgettes. (Never looked for them before)

Wonder if courgettes are easy to shred.

Found an egg free one, great:

Ingredients
Nutrition
Servings 6-8
Units US

1 1⁄2 cups all-purpose flour
1 cup caster sugar
1 teaspoon bicarbonate of soda
1⁄2 teaspoon ground cinnamon
1⁄2 teaspoon ground nutmeg
1⁄2 teaspoon ground ginger
1⁄2 teaspoon ground cumin
3⁄4 cup zucchini, grated
1⁄2 cup sultana
1 cup walnuts, chopped
1⁄4 cup vegetable oil
1 teaspoon white vinegar
1⁄2 cup water
2 oranges, separate zest and juice

Directions

Add ingredients to a mixing bowl in the same order as listed.
Mix with a wooden spoon for 1-2 minutes.
Pour into a non stick round or loaf tin that has been greased.
Bake at 350 degrees F for 40 minutes until a skewer comes out clean.

I'm smiling at the fact someone said they were pleased there had been less mentioning of cake and I have managed to (accidentally) hijack an entire thread which is now discussing nothing but cake <contrite face>

Indeed, not my GS's fault either ;) he loves chooks too. But the tiniest amount of egg results in immediate anaphylactic shock, adrenalin, emergency hospitalisation and possible intubation. Not much fun, really ...

Nothing wrong with kids eating a reasonable amount of cake. Just because I have to watch my weight, carb and sugar intake, does not mean GC have to. They are on the go all the time, cycling, swimming, running around, playing cricket and rugby, and both very slim- GS i so tall and lanky but strong, aged 8.
