A new low-carb support thread for 2016

Thought we needed a shiny new thread for the New Year.
The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

The cauliflower was delicious, mamie but DH thought it was a bit dry so next time I'll steam it for a few minutes before roasting.

Tonight we're having Lamb and sour cherry meatballs with a tomato sauce from Persiana. I think I'll also try Persiana's chargrilled aubergines with saffron yoghurt. I am out of yoghurt but have some fromage frais that needs using.

I love picking bits and pieces out of Persiana recipes and using them with other ingredients. There's such a lot to choose from.

Yes I have done those merlot. The aubergine was great but I am crap not very good at meatballs and they fall apart and end up as spicy mince.
Managed to track down a cauliflower today so will try the roast over the weekend.

Been on low carb for two weeks. Expected to feel "foggy" but I feel dreadful! Last night couldn't stop shivering, went to bed with hot water bottle. I had had a couple of glasses of wine, we are "drinkers", was this the cause? Maybe this diet is not for me!

I have followed the Diet Doctor 2 week plan to the letter, drinking bouillon each day. My husband feels ok. He is the one with the sweet tooth and is doing fine, whereas I am a cheese addict and am struggling with sugar craving. Can we introduce more carbs this week, and what would you suggest. Can we eat anything sweetish. Thanks Mamie in anticipation.

We left some low GI slow release carbs in our diet at first and did it all quite slowly over a year. I would try some pulses or pearled spelt or chickpea fritters or chickpea biscuits. Keep quantities small. We also used to have a bit of dried fruit. I make lunchtime salads with things like avocado, garlic sausage, dried apricots, pecans, tomatoes, leaves, beetroot etc. After dinner treat might be a date or fig. Dry wine all the way through!

You won't get ketosis or dramatic weight loss of course, but we both lost about 1lb a week that way. You can only do what you can do!

It has been quiet on this thread for a few days, so thought I would wake you all up. 3lb more to lose and it will be 2 stone !!!
Weight loss has slowed a little but that is fine by me.
Mozzarella stuffed chicken breast with Parma ham this evening plus a green salad. I have never felt so well. Sleeping better, no acid reflux and masses more energy. I may even go for a further stone , If the clothes budget can stand it grin

Morning all. The reaction to the strawberry cake lasted about three days and involved pissing for Normandy. At the end of it I had taken off the extra 1lb that had been there since January. It was almost as if my metabolism needed a kick again. Very strange and I am not recommending it!
Off to England tomorrow which will involve a very early start to get round the blockade.
Chicken curry and aubergine tonight.

Mamie I must have missed the strawberry cake incident - what happened?

In the slow-cooker right now I'm batch-cooking chicken & fennel:

Thinly sliced red onion
Thickly sliced 2 fennel bulbs/heads?
Topped with 8 chicken thighs (bone in, skinless) browned in olive oil and butter & sprinkled with our friend Za'atar
One lemon quartered
Seasoning

BTW I get my Za'atar from Ocado

Glad you're on the mend Mamie and hats off to you BB

I watched that Helsom (?) & sister Cookery programme last night and just tried out their bacon, egg, mushroom, tomato, asparagus & spinach 'full English' as a brunch.
Very tasty (though I have the eggs 5 mins) and quick and easy. Everything in one dish, in the oven, no hassle.

Without the bacon would make a great veggie brunch... Just add extra everything else.

Riverwalk we had people to dinner who brought a lovely strawberry cake from the patisserie. It had quite a bit of icing which was obviously very sweet and was the first really sugary thing we had had for months. We both had a really restless night with hot sweats, racing heart and busy brain, upset stomach in the morning and then three days of weeing a lot. Can only think it was a sort of reaction. All fine now.

I have just bought a pair of trousers a size smaller than usual!! It is just that the scales don't seem to register a significant weight loss. Still I am happy. Out tonight to a local taverna, for chicken kebabs and salad, the others will have loads of chips with theirs, made with delicious Cyprus potatoes. envy
