Tonight we had Chicken Kiev with Lyonnaise potatoes. I have to admit the CK was not made by me but a local butcher whose ready meals are really, really good but I did make the Lyonnaise potatoes myself and I know I shouldn`t blow my own trumpet but it was a good meal

sparkygran I looked up the word Choka and it means a mashed up roast veg dish.

However, in Korean Choka is a very rude expression. blush !

I ate a whole egg, but not the chocolates that came inside it. I do have some standards! grin

Cold chicken and a salad of red rice, roasted vegetables, toasted almonds and goji berries in a honey and orange dressing. The salad and the rest of the chicken will do for lunch tomorrow as well.

Cook red Carmargue rice and leave to cool. Make dressing of oil, honey, orange juice, red wine vinegar, salt, pepper. Add sliced small red onion, goji berries (barberries in the original, but not to be found in Normandy) and rice to dressing to soak up flavours. Lightly griddle slices of courgettes and aubergine. Add veg, slices of roasted red pepper (the tins or jars work fine), chopped parsley and coriander and whole toasted almonds.
I do 100g of rice with one each of the veg and a small handful of nuts and berries. Roughly 4 tbs of olive oil, teaspoon of honey and vinegar and juice of half an orange for the dressing. I have adapted the recipe slightly from the original to meet local availability and what we have in the garden.

A healthy option hmm - fish finger sandwiches. Made with slice-it-yourself white farmhouse bread, BUTTER and tomato sauce. Or tartare sauce. With a nice glass of red wine. wine Bon appetit to me ..

At lunch time DS visited. We had a salad with pork pies, a selection of cold meats and coleslaw and potato salad. Crisps and pickles were also on offer.
Tonight, by myself it's cold meat sandwiches and tropical fruit cordial as I drank all the wine sad

Cari, you will not be disappointed. For us, it has chimed beautifully with the need to go low GI, so lots of vegetables, quinoa, bulgar, red rice recipes, but all delicious. Mind you the puddings look divine, but sugar is off, so I don't look at that bit!

Mackerel, new pots, mixed salad.

I made a mini trifle each starting with left over birthday cake, soaked in sherry, topped with strawberries, low fat custard mixed with no fat Greek yog, plus a sprinkling of cocoa powder.

Glass of water.

Ooops NanKate my Choka is definitely not Korean it is Caribbean and my version is not mashed up roast vegs. watched a Caribbean musician rustle it up on a TV programme last year - wish I could remember his name as he is well known but can still see his face must be my age!!

Mamie I practically live on the mixture that you describe, only I vary the grains, so it could be bulgar wheat, various rices, quinoa, millet or couscous. I add various toppings, maybe a little chicken, feta cheese, various nuts and so on, , and serve it on top of a mixed salad, which is why I rarely come on this thread. as it would be just repreating myself most days.

But this afternoon I am going to a cricket match and barbecue, I am really looking forward to it because they do the most amazing freshly-made burgers in really nice granary rolls (there is a choice of breads) and wonderful salads. They do sausages as well but I don't eat them.

Chilli out of the freezer, brown rice and sliced hard boiled eggs. I have no idea when we started to garnish chilli with eggs but it's a great combination!

I've got a Marks and Sparks Count on Us beef thingie and DH has got a non-Count on Us lamb thingie. We will have mange-tout as an accompaniment.

DH's homemade chicken korma and brown rice.
I note some of you regularly have wine with your meal. We only have wine on special occasions, or sometimes on a Sunday with roast. Not a criticism in any way. I'm just slightly surprised smile

Pasta with tuna and cheese could be boring but I fancy it DH will have sausage, beans and potatoes.
Not taking as a criticism Ninathenana but I`ve been through the mill for the past year and the wine goes down a treat and I don`t feel guilty at all

Having seen off on the train my DD and beautiful 7 week old DGD, I will be consoling myself by eating all the high calorie leftovers from their visit I don't usually indulge in - French cheeses, home made scones with clotted cream, the last remaining Magnum. I will certainly be having a glass of wine or 3 tonight to help me get over that empty feeling. I'll be OK tomorrow, but the house is horribly quiet right now.

I hope you enjoy the book Merlot (though maybe it should be Shiraz?). I bought it for my DD too.
