Cauliflower cheese.

I wonder if there's a shortage of these too in the UK?
For some reason they're subject to big price fluctuations here (France). Maybe they're imported.
I bought one today for 2.39€, about £1.50. I'm going to make cauliflower cheese tomorrow. What's your recipe?

I make ours with diced bacon in the bottom of the dish, sometimes add diced onion too.

Cook the bacon and onions in the oven while the cauliflour is cooking - in boiling water to al dente. I use to cook the cauli whole but it's quicker broken into florets. Cheese sauce is roux based white sauce with lots of strong cheddar. put it all together, top with breadcrumbs and some grated cheese, put it back into hot oven until topping is crispy.

I used to do potatoes with it but even DP with a big appetite found it too filling!

I've never used mustard (DP once claimed he doesn't like it) but it sounds good. I might give it a go next time. I bet he won't even notice grin

Breadcrumbs are quick and easy to make, whizz bread in food processor and dry out the crumbs in the microwave. I make them in quite large amounts and keep them in an airtight container. They won't spoil as long as they have no moisture left in them.

Only the tip of a teaspoon of mustard MaizieD! it just adds a little something.

When I am back to my slim, svelte self (ha ha) I will start making it with a proper roux again.

There are Cornish cauliflowers, broccoli etc in the shops at the moment - why would anyone miss lettuce when you can have cauliflower cheese?

Grated cheese mixed with breadcrumbs (gf if needed) sprinkled on top makes the topping a bit more crunchy

I like grated cheese with the bought crispy fried onions on top - cheap in a large bag in the Asian section of supermarkets but pricey for a small tub otherwise.

I always add Colman mustard powder and paprika to the cheese sauce and add a layer of sliced tomatoes on top of the cauliflower before pouring the sauce over the top and adding more cheese - I will never be thin! DH won't eat it because he doesn't think cheese goes with cauliflower ?!

DM used to put whole tomatoes in (still in their skins). She pricked the top of each with a skewer I think to stop them bursting open.
Presumably it was when we had a glut of tomatoes from the greenhouse

Didn't see that any of you mentioned the most delicious soup you could make with the left over cauliflower cheese.
Cut it up and heat in extra milk.Then put it through a mill.... texture to suit you

That's like Delia's suggestion of what to do with leftover wine! grin

Actually, it does sound rather yummy, may try that next time, but I will have to make extra.

Instead of breadcrumbs, has anyone tried crushed crisps? - cheese and onion or smoky bacon are good. Open packet of crisps first, then smash with a rolling pin, sprinkle over cauliflower cheese. Evil, like deep fried mars bars.

If you are boiling the cauliflower or steaming it then add a couple of bay leaves as it seems to negate the smell.( someone up thread mentioned their DH hated the smell)

For a change, instead of breadcrumbs or crushed crisps as a topping, try well crushed pork scratchings (obviously not for vegetarians).
I don't like pork scratchings 'as they come' but as a savoury topping they're very useful!
I don't worry about the fat content as you only need a few at a time, the rest are kept in an airtight container.

Our kind of cauliflower cheese with plenty of cheese sauce add to cooked pasta spirals more cheese on top and baked delicious, a cauliflower pasta bake.

I love cauliflower but only with grated cheese on it just before it goes to the plate, strong cheddar, can't eat many sauces so that's the way I do it.

For the ultimate cauliflower cheese add a tub of mascarpone and good cheddar to your white sauce, together with English mustard. Mix Panko breadcrumbs with extra cheese to sprinkle on top. Okay, yes it's a faff, but if you're using lovely ingredients it's worth a bit of faff! Eat half, freeze half. Roasted tomatoes with big Portobello mushrooms, also roasted. Mmmmm!

Anyone like cauliflower broken into florets and roasted in olive oil with chopped bacon and garlicglives, When it's ready, sprinkle with parmesan and put in the oven for 5 minutes or so.

florabunda I make a tuna casserole that my US mum made since the 1960s with crushed crisps on top of a chopped tomato layer. They are yummy that way and less stodgy that breadcrumbs.

I do love my cauli-bakes and do them differently sometimes. Love the bacon idea. What about chorizo? Could be a nice main. We have it at Christmas, too.

A bit of nutmeg ground on top is nice for the cheese/mornay/bechamel or whatever sauce you use.

I use a head of broccoli and a head of cauliflower and 2/3 leeks all steamed and then sauces, breadcrumbs on top. Sometime put spinach at the bottom of the dish and then cauli on top before putting sauce on.

This has made my.mouth water, so I have just made a cauliflower cheese, roux, strong cheddar and mustard and we are having it tonight with ham and chips. I will blame you all if I don't lose wright this week

All this talk of cauliflower cheese! I just had to make some. I've done it Pittcity's way but love the sound of kitty's, with bacon and garlic. I wonder how many of us are having cauliflower cheese one way or another tonight?

We sometimes have Cauliflower Cheese with a Sunday roast if there are a few of us. I just par boil some florets, make a cheese sauce with a strong cheese then top with more grated cheese and wholemeal breadcrumbs and shove it in the oven to brown. I think cauliflower without a sauce is a very bland and boring vegetable. Indians manage to transform it into something quite exciting, Cauliflower Bhaji yum!
