What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

From the ottolenghi book Simple, prawns, feta and orzo. My favourite dinner. Flavoured with fennel, orange and chilli. The depth of the tastes is fabulous.

Mush, that's what we've just had!

First it was going to be vegetable and ham quiche, but at the last minute I discovered that the pastry case I had just thawed out was broken.

I decided to make a frittata instead. Somehow, I miscalculated the number of eggs needed and it refused to set.

OH suggested adding another egg. I doubted it would work, but tried anyway. I was right - It didn't work.

The end result was a sort of vegetable and ham scrambled egg mush. Actually, it was quite a tasty mush(I hate ordinary scrambled eggs), but still not something I will make again if I can help it. ?

The week before Christmas we traditionally always have quite restauranty type sort of meals.

So tonight it is rack of lamb with fennel cream sauce
New Potatoes we grew for Christmas and de-bagged today boiled with butter.
Green beans
No pudding as DH has to watch his sugar intake.

As a change we had lamb yesterday instead of turkey so I'm wondering what to make with the leftovers. Does anyone have any ideas as I'm not sure other than curry.

Vegetable soup, toast and Wensleydale cheese with pink bits . For pudding a tiny glass full of sea salt caramel +chocolate + creamy stuff.

PS that is what I had yesterday for lunch. My daughter inlaw brought me a jar of her own make of "just soup" which I shall have today, followed by the other jar of that delicious pudd (which was a Xmas present from son 2)

Son 1 may perhaps come today and I have a shin of beef stew thawing if he comes I will make it into a cottage pie. He can have pistachio nuts and a Magnum for his pudding if he wants it.

I envy all those who have a partner who will cook!! My DH's idea of cooking a meal is purchasing ready meals for ME to stick in the microwave!! I haven't a clue what we are eating the rest of the day will have to check the contents of the freezer to see what he WILL eat. He's such a picky eater, but at 80 cant see that changing soon!

Millie22 if you like it, you’ll find a recipe for Leftover Lamb Tagine with apricots (or substitute dates for apricots if you have one and not the other) by Googling on t’internet.
Rice or cous cous to go with it?

We had cold turkey, gammon and cranberry sauce, with jacket potatoes and a homemade coleslaw-type thing. And very nice it was too.
