What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

I will be making a hot pot with beef and root veg, finishing with potatoes on top and a sprinkle of cheese. Sticky toffee pudding for afters.

DH made a Thai green curry with some pork fillet last week and rather overdid the paste? which means I shall have to dilute with coconut milk to make it palatable.....

going to try a GN ‘left over turkey’ recipe. It’s a turkey and apricot bake and am trying it only because I happen to have some ready to eat apricots staring at me from the cupboard. Has anyone else tried it? If so, what did you serve with it? Probably cries out for a healthy green salad but definitely not in the mood for that.

Our traditional, very thick, turkey soup/stew, made with lovely rich stock from the carcass. Not much turkey this time, but loads of assorted veggies.

Sausage and mash for us this evening. Yesterday we had ham and lentil soup made the lovely jellied stock the ham was cooked in. Unfortunately, though delicious, it was incredibly salty so today I have added some potatoes and some more red lentils to try and absorb some of the salt. If that doesn’t work, I’ll have to bin it.

Slow cooker on with stewing beef and onions.
Smells good, may just make Yorkshire puddings instead of potatoes and have cabbage and carrots.

Prawn and butternut squash risotto tonight. We had smoked salmon and cream cheese bagels for lunch. I do love Christmas leftovers!!

As I didn't get round to making sausage rolls, I'm making a sausage pie with added onion, apple and sage. Mashed potatoes and veg (not decided yet).
Very naughty but it's miserable out there and snow has turned to sleet.
Perhaps baked apples stuffed with mincemeat for afters.

Fish and chips with mushy peas from the chip shop, I’ve only eaten 2 weetabix, kiwi and prunes at 11:30 today, DH has had bacon sandwich and later a piece of Christmas cake, so we’ll be ready.

Tonight, it is what the children used to call "wall paper paste" turkey! I make a white sauce with the remaining gravy and any stock, add turkey, sweet corn, mushrooms... and bake with/out dumplings. DH loves it - has been asking for it for days.

Paddyanne, NOTHING is a marriage made in heaven where butterbeans are concerned! I shudder at the memory of the thick skinned horrors that my Mum put into stews ... I love all the other beans (cannellini, borlotti, kidney, you name it) but butterbeans, never.

We are having bangers and mash with broccoli and carrots tonight, btw.

After all the xmas food and treats over the past few days I am having a salmon sandwich with cucumber and am following EVs steps and having crackers and stilton blue cheese for afters.

Spaghetti carbonara. Spaghetti, bacon, eggs and double cream left over from Christmas, topped with grated parmigiana. However, we like it with Worcestershire sauce, Italians would probably turn in their graves at the very thought. No pudding, just a couple of squares of chocolate. All washed down with a glass of Malbec.
