What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

A super-thick soup, with red lentils, pearl barley and lots of different veggies, plus two very dried up rashers of bacon I found lurking at the back of the fridge.

The other half of the macaroni cheese I made yesterday---always heavy-handed with the ingredients, so in the oven it goes to heat up. It was a large casserole dish grin I'll do some streaky bacon with it.

Lemongrove My dish of bacon, leek, mushroom and pasta with Creme Fraiche is a recipe I made up a long time ago. I'll give you the recipe and quantities I use for myself.
4 pieces of smoked streaky bacon, cut into small pieces
1 leek, cleaned and chopped
4/5 Chestnut mushrooms, cleaned and chopped.
Creme Fraiche
1 ramekin of pasta, your choice.
Put pasta to cook for 10 minutes.
Dry fry bacon til half cooked, add leeks and mushrooms and continue to cook until the bacon is properly cooked and veg. softened. Drain the pasta, add to pan, season with black pepper, if liked.
Add 2 dessertspoons of Creme Fraiche, stir to coat all ingredients. Enjoy!
I usually have a second vegetable as a side, with this meal. Garlic is nice in the mix too, if liked.

One of the pies I made and froze, with leftover Christmas turkey mixed with leeks and mushrooms. With that we had new potatoes, carrots, peas and sweetcorn. And lots of gravy. And a glass of well-chilled Sauvignon Blanc.
