What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

A curry that nearly wasn’t a curry because just as I put the lid on the pan and turned away from the stove I realised that the spices were still sitting neatly arranged on a plate on the worktop. I thought it looked a bit pale! They should have gone in at an early stage so I just bunged them in and we’ll take our chances!

Poached salmon fillet, Jersey Royals and peas. Followed by apple stewed with vine fruits , cinnamon , mixed spice & kefir on top .

Chicken, leek and mushroom pie - rather more leek and mushroom than chicken - I had some leftover roast bits in the freezer. Pastry also 2 small lots from the freezer, probably leftovers from mince pies. Wasn’t sure there’d be enough - had to roll it very thinly!
Will have it with nice green beans - also freezer.

My DH’s birthday so I ordered a meal from Cote. So we started with prawn gratinee followed by lamb rump with roasted mixed veg. Creme caramel and chocolate and almond fondant. We shred the last two. Delicious.

Sicilian Chicken. Plus I made a pudding too because it's Sunday, apple and blackberry crumble, haven't had any yet, quite full up.

Ribs of beef on a bed of root vegetables with garlic and red wine, it had been in the slow cooker for hours.
With sprouting broccoli from the garden.
Plums from last year's crop with Creme Anglaise, lovingly made by me.

Actually, I cbb so it was a tin of Ambrosia custard.

2 delicious lamb chops, creamed pots and carrots and mint jelly. A fresh pear for afters.

( it would easily have been enough for two people) grin

My signature ? ‘dustbin’ soup, since I have a lot of veg and pearl barley. It would be very virtuously veggie if not for the chicken stock, and the grated cheese we invariably top it with.

I’ve only ever made custard as part of an apple sponge pudding (it uses split trifle sponges, dead easy) - but for normal puddingy use I swear dh would rather have good old Ambrosia than anything I might bother to make.

I made proper custard for a trifle once and DH said he'd rather have Bird's custard.
It's no good trying to upgrade him.
Ambrosia is easiest for pouring over puddings but not set enough for a trifle.

Salmon with dark soy and ginger with stir fried tenderstem broccoli, sweet peppers and sugar snaps on fresh egg noodles. I’m doing ground rice for afters mmmm!

Scampi, chips and marrowfat peas.

Did anyone have carlins yesterday? I boiled mine in ham stock, and served them with white pepper, a knob of butter and a splash of vinegar.

(It's an old north east tradition, sadly dying out as carlins seem hard to find. )

DH has made a pasta sauce with tomatoes, veggies, lentils, and bit of sliced cold sausage. To be served with wholewheat pasta. (As always, it's his own recipe; just put together as he goes along.) It smells delicious.

Still a favourite of Dh - ‘school dinner’ mince out of the freezer, or rather my version, which is about 50% red lentils and sundry veg chopped very fine. And a good slosh of Worcester sauce.
With mash and cabbage.
