What's everyone having for dinner?

What are you all having to eat tonight? I cook every evening and have been getting bored with the usual meals. Tonight, I've made a Chicken Jambalaya - it's a Hello Fresh recipe I had ages ago, but I bought all the ingredients and have adapted it a bit.

I've made a carrot cake for afters.... with cream grin

Diet here for me, not the string bean DH who never puts on weight. So, chicken, left from Sunday with chips for him, hake with vegetables for me.

A soup day for me as I'm starting to feel a bit fatter, DH is going to have ham, left over from the piece that I cooked on Sunday with sauted potatoes and an egg.He has to eat quickly as he is playing bridge from 5 till 6.30 and again at 7o'clock, he can eat his supper in the half hour slot!

I’m making a pud for once - apple sponge pudding in the oven. Stewed apple with 2 split trifle sponges on top, then a quick egg custard poured over.
Haven’t made it for ages, so we’re looking forward to making ?? of ourselves.

It was supposed to be a veggie version of a vegan lasagne - a trial before taking one to a dd’s over Easter, but in the end I couldn’t be bothered so it’s going to be my salmon and broccoli pasta thing instead.

I have a stack of mushrooms for the purpose though so will try it on Monday. (Gammon joint tomorrow.)

Split meals, I’m having leftover beef casserole from earlier in the week with broccoli, cauli and carrots. DH is sorting himself chicken Kiev and chips; as normal, no pud.

We had smoked haddock gratin, it's a regular as it's easy and delicious. Basically smoked haddock on a bed of spinach, with new potatoes and cherry tomatoes covered with a cheesy gratin. I just wack some cream with some tarragon in with it and bake in the oven. We had some of the last year's broad beans from the freezer as a bit of extra greenery. Yum!

Baked free range gammon joint with parsley sauce, mashed potato and broccoli.
No pud, I hardly ever make one anyway, and in any case we’ve been indulging too much in lovely fresh jam doughnuts lately.

Lamb chump chops, roast potatoes, parsnips, carrots and sprouts. DH will have mint sauce , I prefer red currant jelly.
Fruit and Greek yogurt for pud.
