I've just cooked cheesy-breadcrumbed Basa, with sweet potatoes and oven-roasted Mediterranean vegetables. (It's a Gousto recipe I had ages ago) Gorgeous.

Tomorrow, Saturday -- I found a new to us recipe, trying for whomever drops round at meal time.

Tahini Lentil Salad Lettuce Cups. Basically lentil salad with chopped tomatoes, cucumbers, celery, shallots (I'll add chopped cashews) - dressed with easy tahini dressing - loaded in long cos/romaine leaves.

The dressing seems quite easy. Tahini, lemon juice, garlic clove, za'atar spice mix, mustard, ground cumin, salt, pepper.

Tenderloin of pork pan fried and served with mushroom and garlic sauce. Mashed new potatoes, cabbage and carrots.

No cooking for me today. I'm on a coach trip staying in a rather nice hotel. For dinner I have chosen tomato and red pepper soup, gammon steak etc. and for dessert, Eton mess.
I do hope it will be good, I'm getting hungry.

curry, rice and roti

reminds me of my mil and Cape Malay cooking. How do you make roti - she taught me to make roti Cape Town style: roll the dough into a thin round and brush with butter, roll and make a snake, and roll out again- brush with butter, and as above 3 or 4 times- then fry and crush a bit with hands before serving. How many calories a slice ? Don't even ask.

Yesterday I made a pan of roasted tomato and red pepper soup. I also made a baking tray of Greek stuffed vegetables meat free for two nights meals.

Not dinner, already sorted. However I made delicious Corn Cheese Salad for GC at lunch, great use to part of huge quantities of cherry tomatoes.

1 Tbsp. extra-virgin olive oil
1 Tbsp. fresh lime juice (from 1 medium lime)
1 Tbsp. mayonnaise (I made aquafabba)
3/4 tsp. kosher salt
750 g. frozen corn yellow corn
1 cup cherry tomatoes, halved
2 Tbsp. finely chopped fresh cilantro
85 g. Grated Parmesan cheese, divided (I omit)

Whisk together oil, lime juice, mayonnaise, and salt. Grill corn kernels in a dry skillet until some are darkened. Add to dressing in bowl. Add tomatoes, cilantro, and cheese. Toss to coat, garnish with remaining cheese.
