What is for dinner today MK II

We had an easy Sheet pan dinner of Greek Chicken and Potatoes with courgettes, onion, garlic and lemon with a Greek Salad. Has become a firm favourite that requires minimal effort.

Today its Blue Cheese salad and crispy potatoes with lemon oil and balsamic dressing!

Leftover Christmas gammon with either jacket potatoes and homemade coleslaw, or colcannon, since there’s a Savoy cabbage that could do with being used up. I have yet to decide! ,

03 / 01. Wednesday. CARDOON & LEEK CHOWDER ..

Since we had a Cardoon & Almond Soup for our main, we had a few canapès and cheeses on light Wasa Crackers from Sweden. Cardoon ( Navarran vegetable that looks like giant celery stalks -´however, UNLIKE CELERY, one must labourly peel the stalks prior to using ) ..

We love Cardoon and it is uncommon in today´s society outside of Navarra and La Rioja and Álava, The Basque Country.

This is a very simple preparation once we have mastered the peeling of the stalks !!!!!!

Leek & Potato soup with garlic bread then there is a choice of ice cream which Mr T will eat at any time of the year or a dive into one of the Christmas chocolate boxes/hampers.

Cottage pie followed by fruit and a piece of cheesecake to finish it off.

Thursday - the 4th of January:

Had a million things to do this morning so lunch was take out from SUSHI SHOP which is dedicated to a variety of Sushi Maki, Sashimi & Nigriri .. Absolutely amazingly lovely.

Lentil shepherd's pie, salad, fruit, bread. No pud - must lose 2 pounds.

Cottage pie made with minced beef, lentils, grated carrot and onions, served with sprouts and cauliflower.

Today we had steaks with pepper sauce, potatoes mixed vegetables and yorkshire puddings.

We are having a pancetta, mushroom, gruyere and egg bake thing (!!) with sweet potato fries.

Not sure yet, something with leftover roast chicken.
And leeks? Leftover red wine?

Sounds like what I make for my veggie dil when we tuck into cottage pie. She seems to appreciate it (unless she’s being polite). I also include chestnut and porcini mushrooms.

Mussels with bread to soak up the juices, followed by berries and Greek style yoghurt for dessert.

The last of the Christmas gammon, with homemade coleslaw and a box of M&S frites I found in the freezer the other day. I don’t recall ever buying such a thing - maybe dh did - but in any case I’m sure it’s time they were used up.

Yesterday we had haggis, mashed potato and swede, carrots, sprouts and creamy gravy.

I'm going to zap some pastry in the food processor next for a quiche tonight. Probably cheese, mushroom and tomato. We'll have it with beer battered onion rings (cook gets excess beer) and either jacket sweet potato or couscous.
