What is for dinner today MK II

I hope I am committing a sin by starting a new thread but the other one is full and I enjoy it and the photos smile

I popped to the cheap farm shop on the way home from work to buy dog food and vegetables so I have made a sausage casserole with jacket potatoes. I normally put the potatoes in the casserole (I know wink ) but there was no room as I bought a rather nice leek grin it smells delicious smile

Greek salad (last of the allotment tomatoes and Basil grown on the kitchen window) and sweet potato fries. Apple and blackberry crumble and Greek yogurt.

Salmon with two baby potatoes. Honeyed carrots and parsnips roasted in air fryer. Then some leftover tinned pears with slice of Vienetta. Am on calorie controlled diet to lose weight by Xmas I hope.

I’ve been out all day so a quick meal of a Scotch Egg, salad, new potatoes and beetroot, I succumbed to a small slice of apple pie with cream for dessert!

Well I’ve been incredibly boring/busy and have done a Mexican Maggi bag 🙈 with onion,chicken thigh strips, peppers to have with some wraps I got for 40p . It will make some lunches too

Mashed potato, asparagus and cod and parsley sauce fishcakes from a “luxury” range at Tesco. Very nice.

I'm making more Vegan food these days so tonight I'm making:

Sliced aubergine, long ways, fried,(slices steamed first so they don't soak up too much oil) Two pieces with a filling of boiled and mashed parsnips with fresh thyme and crushed cashew nuts. I make a a sauce with of lots of roughly ground pepper flambed with cooking brandy and plant based cream added.
I'll serve with rice and/ or spinach or green beans. I make plenty as it keeps in the fridge (without the cream sauce) and freezes really well.

I really wish I liked salmon, I’ll try the teriyaki, is it just cooked in the sauce please?

I marinade the salmon while I prepare the fried rice stuff then cook it in the sauce. I make twice as much sauce as the recipe says which keeps the salmon moist. I then flake the salmon into the sauce then serve it qith tge rice.

I do the same with boneless chicken thighs.

It was a Nigel Slater recipe but has evolved!

Chicken breasts stuffed with,mozzarella,Parmesan,cream cheese,wrapped in Parma ham,in the air fryer,chips and a Greek salad.

Never heard of Briam,on my list to cook now.

I made lasagna from the recipe by Pasta Grammar (YouTube channel). I used shop bought dried pasta sheets though. Side salad and garlic bread. Lovely.
