Dh is away until very late, so I’m just going to have macaroni with plenty of grated cheese, and lots of cauliflower florets, cooked al dente, mixed in.

Sunday: 17 / 03 / 2024 ..

Brunch is always very special for us .. The weather was just perfect .. Blue skies, sunny and approx 22 Centig. degrees ..

I always enjoy my Eggs Benedict with smoked salmon and Hollandaise. My husband had the traditional Eggs Benedict with Iberian Ham.

Dinner:

Relaxing and simple ..

A Naples style Margherita Pizza "take out" and a simple lovely salad and a glass of wine.

Lent and vegans, St Patrick's was difficult, we made it work.

Our GC all love potatoes, and I make lovely fried potatoes.

Potatoes, green salad, 5 bean salad, fruit, and cake.

Jacket potatoes with veg chilli. Fresh fruit salad and Madagascan vanilla ice cream.

Roast pork, roast potatoes, broccoli, cauliflower, glazed carrots and peas, yorkshire puddings, apple sauce and gravy. Followed by Passionfruit cheesecake.

It was a lovely piece of pork enough for tomorrow too. All pork joints half price at Tesco this week.

Today was vegetables and tofu noodles - with a lovely mix of tahini, white miso, soy sauce, rice vinegar and sweet chilli sauce (equal spoonsful, blended together) drizzled through - yummy, five minute dinner.

Beef in red wine, carrots and parsnips (slow cooker) served with mash and cabbage.

Double egg, chips and baked beans, 🤤

spaghetti bolognese, followed by some homemade ice cream

Lunch today was quick and on the go.

Roasted cod in oven with a light tomato drizzle, garlic, leek and olives and a small salad of tri color field greens ..

Dinner shall be:

Assorted Club Sandwiches "in light style" with a light beer on our terrace, weather permitting.

Tuesday: 19 / 03 / 2024 ..

Today lunch was Cod fish prepared with parsley, pistachios, almonds, hazelnuts, a drizzle of Hojiblanca Virgin Olive Oil and white wine. A dish called Lomos de bacalaò con frutos secos and a side dish of fresh baby spinach leaves.

Dinner this evening shall be:

Spanish Omelette with a light salad of mixed lettuces and cherry tomatoes.

Wednesday 20th -

roast chicken, roast potatoes, Yorkshire pudding, Brussels, carrots and broccoli, then pineapple and squirty cream

Tonight I have some left over cauliflower to use up - so it is spicy cauliflower with halloumi rice.

Thursday: 21 / 03 / 2024 ..

Lunch was: Tempura prepared with fresh perch, courgette or zucchine & red bell.

I prepare the dipping sauce with:

Dashi / Mirin / Jerez de La Frontera, Kikoman Japanese Soy and freshly grated ginger.

Dinner this evening:

Crepes Suzette ..

I use 1/ 2 cup of flour all purchase Ecological, 2 tsps of eco sugar, 1 cup of whole milk, 2 eggs lightly beaten, 1 tsp vanilla extrract and a bit of lemon zest.

The Sauce drizzled is:

Butter
Eco sugar
A little lemon juice - fresh
2 or 3 tablesps of heavy Cream

I serve with fresh blueberries and fresh strawberries.
