What is for dinner today MK II

Saturday: 23 / 03 / 2024 ..

Lunch:
Since the temperatures have risen, we kept it quite light.
A French Omelette served with a Caesar Salad.

Dinner: Shall be out with dear friends for Napoletano Pizza (thick crust).

Have a wonderful weekend.

Two ready meals bought by dh the other day, don’t even know what they are and don’t care. Also had one last night - a Charlie Bigham fish pie - after getting home late and knackered after doing Gdc duty since Monday.
Tomorrow we’ll be having roast pork though. 😋

Oven fish and chips with mushy peas, I might have a pickled onion 🙂.

Tortilla wraps with chilli out of the freezer, crispy salad and grated cheese.

A rather traditional vegetarian dish this evening: cauliflower cheese. I have to admit to using far too much cheddar. Possibly needs another sprinkling.
Or two.

Lunch Tuesday 26 / 03 / 2024:

Lunch today was a simple Tortellini with cheese filling and a salad (nothing fancy) ..

Dinner Tonite: The plan is oven baked Cod fish ( Bacalao al Ajoarriero) which is prepared with leek or shallot or onion, green bell, cod, garlic, choricero dried pepper, homemade tomato sauce, fish stock and Extra virgin olive oil, black pepper .. Simple dish with a hint of spice !!!

Home made chicken curry for dinner tonight, served with rice and poppadoms. Fruit to follow.

29 / 03 / 2024 - Friday.

Since lunch was a classic Italian Meatloaf served with a side salad, we shall have a very very light bite approx. 21.00.

An array of tiny sandwiches..

The weather has been awful, rain, windy and grey for 2 days. So, we shall watch a film and have a simple array of munchies.

Ensaladilla Rusa ( Olivier Salad) - a potato - tuna salad very common in Spain.

Some Quiche - spinach and Gruyère cheese.

A glass of wine and some charcuterie with assorted bread stick & crackers.

Fish pie - homemade - in the oven right now, ready in a few minutes.

Fish and chips for lunch. Boiled egg and a chocolate/orange hot cross bun a little while ago. Vegetables tomorrow .

Frittata - leeks, Parmesan and mushrooms, served with new potatoes, carrots and peas.

Sea bass, you can’t take the catholic out of this girl when it comes to certain things. Maybe not every Friday but certainly Good Friday.

Sunday 31st -

Roast chicken, roast potatoes, Yorkshire pudding, carrots, sprouts, broccoli. Profiteroles for afters.

1st April 2024 .. Monday ..

Lunch: A home made aubergine lasagne with homemade tomato sauce, fresh bakery baguette and a simple salad. Instead of lasagne sheets - I employed very light pre-sautéed aubergine slices.

Dinner: This evening we will have club sandwiches. We eat our main for lunch ..

We had 4 days of horrendous windy, rainy and stormy days. Today was the 1st sunny day we had however, it was colder than February !!

Nice evening wishes.

Roast pork with apple sauce, roast potatoes and creamed spinach.

Roast lamb, Yorkshire pudding and all the trimmings. A chocolate mousse type tart for dessert.

Crispy roast duck with rice pancakes, spring onion, cucumber, and hoisin sauce. 😋

A chicken, leek and mushroom pie - no pastry, lots of mash on top, with grated cheese.

Saturday 27 / 04 / 2024 ..

Tonight are homemade fajitas with beef and tri color strips of bell peppers, sweet Galician onion and Mexican spices .. They had a sale on the "tortilla" Mexican breads. 1 € each with an expiration date of September 2024 !

And a film on t.v.

Quiet relaxing evening with husband.
