We’re doing a family challenge for Saturday nights, cooking a dish from different countries by working through the alphabet. DD has kicked it off by choosing Argentina so I’m doing Beef empanadas. The mixture has made three so there will be two for the freezer.

Ocado coming this morning and know there is a pack of stir fry veg in there so better do those as they seem to go off quickly not sure what to put with them could be salmon, prawns or chicken.

I often forget the stir fry veg and then have to bin them.

Monday: A work from home day for me so had time to prepare lunch for the two of us.

Just an idea for suggestion:

Wrap the potatoes in aluminum foil and bake or roast them separately. When done, place some baked leek over the baked potatoes with the sausage ..
