What is for brunch or lunch ?

28 / 11. Tuesday.

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

I am so boring but apart from lunch out, I have yet to move on from stuffed pitta bread with chopped cherry tomatoes, spring onions, maybe cucumber and something like taramasalata or hummus (smoked or Moroccan my current favourites)

Saturday, the 13th of July 2024 ..

My husband, our niece and her husband and I all went to our favourite Pizzeria for Pizzas .. I always have the classic Napoletano Margherita with mozzarella di buffala, fresh tomato and fresh basil (no sauce).

Then we went over to one of our favourite foreign language bookshops which is one of the oldest in the city.

Lovely afternoon ..

Picked up some lovely fruits enroute ..

Sunday: The 14th of July 2024 ..

Lunch at home today shall be:

Starters:

Tapenade (Kalmata Olive Spread)
Beetroot Hummus
Traditional Chick Pea Hummus
Served with assorted breads including Pita, Italian breadsticks, Swedish cracker breads and bakery fresh Baguette ..

Then, the main shall be:

Fresh baked Cod Vizcaína .. A Basque classic ..

Dessert: Torrijas - which is a renowned traditional Easter dessert, however, can be eaten all year long.

The ingredients are very similar to French Toast and they are: Thickly sliced Bread of choice, Milk or white sweet wine, lemon zest or orange zest, eggs, cinammon sprinkled and a drizzle of organic honey.

Fresh fruit topping ( blueberries or strawberries ) ..

Our wine is a Somontano, Aragon blush called Gross Rosado and has a gorgeous pale salmon color mono varietal Merlot grapes.

Creamy paprika chicken. Cooking a batch for the freezer in anticipation of lots of busyness over the summer.

Just back home from having brunch at the brassiere along from us.

I had smashed avocado mixed with seeds on sourdough bread with poached egg, and a latte. DH had a variation on a full English, we shared a bowl of fresh fruit, delicious.

Wonderful atmosphere.

Lunch: Bought some lovely organic veg. from a Farmers' Market yesterday so cooking that for lunch today. Going to see if there is a difference in taste. The vegetables were quite small so I had to buy more but hope they will taste all the better for it.

Monday - The 15th of July 2024 ..

Lunch today shall be:

Salad: A French Bistro classic: Tiède aux oerufs en meurette which is:

A warm frisée lettuce with lardon and poached eggs, shallots, thyme sprigs, parsley sprigs, white wine vinegar with Extra virgin olive oil and some dried spices, peppercorns and salt with French baguette cubes (croutons).

The main: Entreôte et Bérnaise ..

Dessert to be served a bit later is melon with Greek Yogurt and Blueberries.

Wine: Ramón Bilbao Tempranillo ..

Tuesday .. The 16th of July 2024 ..

Lunch today ..

Red bell peppers stuffed with rice and ground beef (beef mince) ..

Simple ingredients available in most major cosmpolitan cities ..

1/ 4 cup Extra virgin olive oil
1 onion
1 leek
I used 1 cup of long grain rice
2 cups of water
1/ 4 cup of San Marzano tomatoes (tinned or jarred )
3 tablesps each of finely chopped fresh spearmint leaves, fresh parsley and fresh dill ( divided evenly)
salt to taste
1/2 tsp allspice
6 or 8 red bell peppers (depending on their size)

Heat the Olive oil in a heavy skillet over medium heat and add the sliced finely onion, sliced leek and hazlenuts or almonds until translucent approx 8 to 10 minutes.

Then reduce the heat and add the rice, water, tomatoes, fresh herbs, spices and salt.

Cover and simmer until liquid is absorbed - approx 20 to 25 minutes.

Now preheat oven to 180 centig and in a clay or glass casserole place the stuffing into clean interior red bell peps.

Top the bell peps with the pepper covers and place the bell peps wrapped in Oiled (do with brush) aluminum foil and bake 45 to 50 minutes until tender.

Serve with a light tri color lettuce salad. I used arugula, radicchio and fennel with a light vinaigrette.

This is a dish from Kusadasi, Turkey which means Bird Island in Turkish.

We had a Sangría ..

Almonds or hazelnuts LISTED in Paragraph # 1. With the onion, leek etcetra.

Then the ground beef (mince) as well should be in Paragraph # 1 and stir gently and cover.

I had my usual wheat biscuits, blueberries, prunes and chopped banana at 11:45 for the first meal of the day. BBQ with friends about 6 pm, lettuce, cucumber, beetroot and potatoes from the garden with some chicken and home made burgers.

Egg mayonnaise on a gf roll for lunch.

Plaice fillets fried in olive oil and butter with the pan juices mixed with lemon juice, freshly ground black pepper and lots of chopped parsley. With homemade oven chips and petit pois.

Wednesday - the 17th of July 2024 ..

Lunch today: (No recipe .. very simple Basque Cod Dish ) ..

Is a traditional Basque Cod fish recipe called Bacalaó al Ajoarriero ( with garlic, fish fumet (strained fish stock), fresh parsley, Extra virgin olive oil, leek or shallot or onion of choice, 2 potatoes, chorceros which are a dried red chilie pepper very common in Basque Cuisine, white peppercorns grinded and a sprinkle of salt of choice.

Can be baked or cooked stovetop.

The Starter:

A simple salad consisting of Tri color lettuces of choice and finely sliced fennel bulb and lite vinaigrette.
