What is for brunch or lunch ?

28 / 11. Tuesday.

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

Really simple toasted cheese and ham sandwich. Maybe including sliced tomatoes and sliced red onions.

This evening g we will have chicken breaststroke baked in tomato, basil and garlic sauce and topped with sliced mozzarella, olive oil and saved parmesan. With Maman potatoes and green beans. I may par boil the beans and then stir fry them with minced garlic and ginger - depending on how I feel.

Flipping phone - we will have chicken breasts not breaststroke! Very odd as I have never knowingly typed breaststroke previously.

Usual cereal and three fruits at 12, tonight chicken thighs, mushrooms and peas in a creamy sauce (can of concentrated soup) new potatoes, broccoli and carrots.

Thursday .. The 18th of July 2024 ..

Spaghetti with Lobster, tomatoes and Herbes de Maquis which are a diverse herbs including: Fresh basil, fresh oregano herb, fresh rosemary sprigs, fresh thyme herb and fresh spearmint leaves.

The ingredients are very simple and can be substituted for any shellfish or finned fish of choice.

San Marzano tinned / canned tomatoes
2 lobsters or substitution of any shellfish or finned fish one prefers
3 tablsps. of Extra virgin olive oil
2 garlic cloves
1 tablesp of red wine vinegar
1/ 4 teaspoon cayenne
1/ 3 cup whipping cream
250 grams ( 120 grams each person ) of pasta of choice - we prefer spaghetti or linguini ..

Chop the tomatoes and bring large pot of water to boil.

Add the lobsters and boil 2 minutes.

Using tongs, transfer the lobsters to a cutting board.

Remove the claws and crack open.

Remove the lobster meat and slice into bite size pieces.

Slice off the tails and crosswise, into 4 pieces each.

Then slice the body of the lobster lengthwise in half.

Remove the coral ( bright orange part ) and the greenish tomalley. Finely chop.

Heat in a Dutch oven over medium heat and add the lobster body pieces (not tails and not claw meat ), onion, garlic and sauté until onion is tender about 10 minutes.

Then add the lobster tail pieces, claw meat, coral, tomalley, tomatoes sliced finely and reserved juices , vinegar, herbs and the cayenne and bring to a high simmer.

Reduce the heat and simmer until the lobster is cooked through approx 8 minutes.

Using a slotted spoon, I removed the lobster tail pieces and the claw pieces .. Then I added the cream to the sauce. I simmered 15 to 19 minutes and using tongs, I removed the lobster body pieces. I seasoned the sauce with white peppercorns grinded and salt to taste.

Then I prepared the pasta in a pot of boiling water and the directions are on the package of pasta implemented.

I drained the pasta and returned to the pot and added the lobster and its sauce and tossed to coat.

Division amongst 2 large plates ..

Serving with a Galician Albariño Pazo de Señorans from Cambados, Pontevedra, Galicia.

It is 13.30 and we are going to have lunch and a bakery French style Baguette to dip into the sauce ..

That's more than my weekly shopping bill! shock

Lobster is in season and thus it cost for the 2 lobsters 24 €uros.

The pasta from Italy cost 2 € for 500 grams ( 2 meals x 2 people).

It all depends where you reside and if one reviews the shops brochures / catalogs of the discounted offers ..

The U.K. is quite a bit more expensive than Spain ..

Today is our lunch out day and we are having lunch at a favourite restaurant Bibo By: Daní Garcia.

Paseo de La Castellana 52
Metro / Underground: # 5 ..

For my main course, I always have the Red Tuna Nigriri ..

Tonight we are having one of my favourite meals - we call it 'a platter'.

A selection of salads (coleslaw, balsamic beetroot, sun dried tomatoes in olive oil with garlic and basil,rice salad, apple and onion salad) with smoked salmon, egg mayonnaise and cold meats. DH will probably also have pork pie but I have no control over him at all!!

Saturday .. The 20th of July 2024 ..

This evening, 6 of us are going to The Gipsy Kings Concert in Madrid ..

So, we had just finished a lovely Jordanian / Lebanese lunch.

We enjoyed the Hummus traditional chickpea type, The Mutabbal ( Aubergine dip) and the Muhammara (the red bell pepper dip). All 3 were truly exquisite.

Then I had the fresh catch of the day which was Lake fish Turbot, a flat fish prepared grilled. Subtle and sensationally flavoured ..

Truly a lovely lunch with our 2 dearest friends, our niece and her husband.

Looking very very forward to seeing the Gipsy Kings once as we have seen them uncountable times over the years and always go to see them when in Madrid or not too far from Madrid.

Sunday .. The 21st of July ..

Today was a Leek & Three Cheese Quiche. Swiss
Gruyère, Italian Fontina & Mozarella di Bufala and Smoked Ham ..

Turned out sensational ..

And hit the spot ..

Monday .. The 22nd of July ..

Grilled Citrus Salmon ..

A simple marinade, which is orange zest, low salt Teriyaka, fresh salmon, leek, salt, fresh sliced garlic and a tiny tiny drizzle of rice vinegar.

I combined the orange zest, teriyaki and the salmon in a sealable plastic baggie ziplock. I marinaded for 30 minutes.

Then, I removed the salmon filets and discarded the marinade.

I grilled in bottom of our oven for 10 minutes more or less as we like a "rare interior" ..

Then I sautéed the leek, garlic with fresh spinach leaves in extra virgin olive oil and stirred until wilted. 2 minutes.

Placed the salmon on the spinach beds and enjoyed !!

Simple and lovely.

Today, was a pasta .. Penne with Arugula, red ripe tomatoes, onion, garlic, oregano, thyme, fresh basil, salt, black peppercorns grinded and freshly grated Pecorino Romano cheese.

Hit the spot ..

Wednesday. The 24th of July 2024 ..

Due to our hectic timetables today, my husband and I, met at Fratelli Brothers Pizzeria for our Napoletano classic Pizza ..

As always, simply divine ..

I always have the Margherita with fresh buffala mozzarella and fresh basil with fresh tomato.

My dear enjoys his 4 cheese Pizza topped with Prosciutto.

Beverage: 2 beers ..

Very hot here and we were happy to arrive home.

Thursday .. The 25th of July 2024 ..

Today is a lite simple fennel and tri color salad with cherry tomatoes.

The main: Prawns in a Romesco Sauce ..

Terribly hot here .. So light and enjoyable ..

Assorted fresh seasonal fruits for dessert ..

It's cool here, too cool for summer but preferable I think.
