What is for brunch or lunch ?

28 / 11. Tuesday.

Sometimes, my husband and I enjoy having brunch during the week at home instead of a typical Menu del Día as we live in The Madrid Capital.
Eggs Benedict is quite versatile and can be prepared with either Smoked Salmon or Bacon or Ham. Eggs Florentine is quite a healthy alternative and French toast is always quite endearing.

Monday, the 16th of December 2025 ..

Had been Christmas Shopping until lunch time and stopped at the Sushi Shop and had Nigriri & Sashimi.

Always a true pleasantry when prepared with fresh high quality salmon and red tuna.

Was 3 centigrade degrees this morning and by lunch time only 8 degrees centig.

Sunny with blue skies but frosty !!!

Tuesday the 17th, 2024 ..

Lunch today was a simple fresh pasta of ravioli stuffed with ricotta and spinach. Served with a freshly made tomato sauce with fresh red plum ripe tomatoes and topped with Pecorino Romano.

Back to wrapping presents ..

Friday: 20 / 12 / 2024 ..

Busy busy with wrapping Christmas gifts and Christmas shopping ..

Lunch today: Red bell peppers filled with mince ( ground beef ) in oven ..

Served with a simple salad of mixed lettuces, cherry tomatoes, home made crotons and Kalamata Olives.

22 / 12 / 2024 .. Sunday ..

Today we had a homemade Winter Minnestrone Soup with parsnips, carrots, chard, white navy beans soaked overnight, minced leek, shredded kale, onion, 1 small fennel bulb, vegetable stock, courgette ( zucchine ) and bay leaf, thyme and fresh parsley.

This hearty classic is simply delicious and so versatile.

Served with bakery fresh baguette and wonderful cheeses ..

TlRoast pork, roast potatoes, cauliflower cheese, red cabbage (with sultanas, apple, spices and red currant jelly) buttered petit pois and jus. Just the thing after being ill and then very busy.

And, best of all - cold pork with bubble and squeak and pickles tomorrow.

We were going to have roast pork etc, but I’m feeling lazy today, so we’ve had a gammon steak (so tender and delicious) with egg, green beans mushrooms and chips.

The pork will now be kept frozen until after the new year.

We're having steak with mushrooms, tomatoes, peas and onions tonight. Plus chips or jacket potatoes.
The trouble is, having had a punch and a couple of glasses of wine, I don't feel like cooking.

Christmas Day 25 / 12 / 2025 ..

Too much to actually mention however, the main was a Roast Pork Tenderloin Tuscan Style ..

Thursday: 26 / 12 / 2024 .. Boxing Day ..

Lunch today was an array of leftovers:

Roast Pork Tenderloin from the 25th main course and we prepared sandwiches with it .. and an assortment of mustards.

We also had homemade Fresh Red Cardoon / Thistle soup with almonds which hit the spot .. It is a family tradition from my mother in law and very much appreciated.

Desserts were typically Spanish: Nougat (turron) of varying types and I had prepared a traditional apple pie with a lattice topping ..

A request from our guests ( our younger twin daughter and her husband and our grand-daughter ) ..

Today we are having a light Pasta ( linguini ) with a homemade quick tomato sauce with fresh basil ..

Nothing fancy today. And freshly baked bakery bread ..

Today we had a simple Salmon Teriyaki for our main and the starter was a lovely Basmati infused with herbs, spices and prawns ..

Friday, the 3rd of January 2025 ..

Today my Dear Husband worked from home (remote) and prepared a beautiful Roast Chicken Classic with Baked Apples as a side.

How lovely ..

I had a funeral service to attend of a dear publisher friend of 98 years old who founded the American Club in 1952. He started a magazine in 1958 and I wrote the Chef Interviews for many years - freelance.

Sunday the 5th of January 2025 ..

Simply simple.

We had brunch at home due to the weather ( grey, chilly and rainy ) ..

Prepared home made Hollandaise and Eggs Benedict with Smoked Salmon ..

We emjoyed tremendously ..

Dessert included 5 cheeses with dried fruits and walnuts, pistachios, dates, figs and fresh Persian Melon and Mango.

Have a wonderful Epiphany tomorrow the 6th and all our best wishes.

Starter today at home was: A caprese salad.

The main: Home-made in oven, Meatloaf ( 100% beef ) ..

Simply divinely lovely for a cold winter day.

I’ve just had the yellow lentil dal, with cauliflower and spinach, that was leftover from last night.
Very tasty. I must make it more often.

15th January 2025 - Wednesday ..

It was minus 6 degrees at 6am this morning and quite cold.

So lunch is:

Homemade lasagne ..

Served with a mozzarella di buffala salad ..

Sunday the 19th of January 2025 ..

Today as the temperatures have dipped to approx. 3 degrees centigrade early mornings and have risen to 11 - 13 degrees centig mid day, it is frosty however, quite sunny with blue skies as well and no no snow in the forecast.

Today lunch is a classical lentil stew with a wide variety of fresh veggies including:

Garlic
Onion
Carrots
Turnips
Parsnips
Parsley
A little leek
Zucchine / Courgette
Red Tomatoes
Aubergine

Spices: Provençal 5 herbs, freshly grinded black pepper, salt and Spanish Paprika (pimenton) off top of head ..

Did a sample testing and it is divine. Simple, uncomplicated and superbly splendid. No fuss.

Hubby helped with prepping and peeling process as well, so this was a "together project" ..

Wanted a vegetarian dish and something for Monday as well.

Wednesday the 22nd of January.

This week I am attending The Fitur International Tourism Convention @ The IFEMA Convention Centre of Madrid, Spain.

So a little of this and a little of that - tasting spree ..

My husband and I had a lovely full morning from 10am to 14.00.

The King and Queen of Spain were there ..

The Guest Country is Brazil.

Thursday the 23rd of January, 2025 ..

Today lunch shall be Basque Style Freshly caught Cod Fish for our main course.

Our starter shall be a parsnip / carrot combined cream soup. To take the chill off ..

Dessert: We do not have dessert directly after. We wait until 17.00 or so .. And we prefer cheeses with fruits verses sweets.
