‘Season of mists and mellow soupfulness…’

OK, it’s not quite yet, but once we’re properly into autumn I really like making lots of thick, main meal soups, with seasonal, largely U.K. grown veg, plus red or yellow lentils, pearl barley, orzo, etc.

Just as well dh really likes them!
Relatively cheap and healthy, too. I have been known to get 11 plant items into one pan of soup.

Thanks to this thread I made my first batch of cucumber soup today. Really good and just what I needed for a light lunch.

My mum made the most wonderful pea soup. She made it with boxed peas, celery, carrots, potatoes and, I think, a ham hock. Although it contained ham, it was always just called pea soup. We'd eat it as a main meal (it was really thick) with crusty bread. Try as I might, I cannot reproduce the sheer deliciousness of it.

Ours is wonderful as well. We're vegan, no ham hock. I believe you could add a ham hock into the liquid, during the cooking.

Pea Soup

1 cup chopped yellow onions
2 cloves garlic, minced
1/8 cup good olive oil
1/2 teaspoon dried oregano
1-1/2 teaspoons salt
1 teaspoon freshly ground black pepper
2 cups medium-diced carrots (3 to 4 carrots)
1 cup medium-diced boiling potatoes, unpeeled
500 grams dried green peas
8 cups veg stock

In a large pot saute the onions and garlic with the olive oil, oregano, salt, and pepper until the onions are translucent, 10 to 15 minutes. Add the carrots, potatoes, 1/2 of the peas, and vegetable broth. Bring to a boil, then simmer uncovered for 40 minutes. Skim off the foam while cooking. Add the remaining split peas and continue to simmer for another 40 minutes, or until all the peas are soft. Stir frequently to keep the solids from burning on the bottom. Taste for salt and pepper before serving. Croutons on top are lovely.

Todays soup here is Minestrone,yesterday was chicken,rice and sweetcorn.I make soup most days enough to freeze and to supply two neighbours who are ill,they also get home baking at least once a week.Itsnice to be nice,I might need someone to supply soup one day.I ,m always happy to help when I can

I made a courgette, pea and mint soup today. I'm always looking for ways of using courgettes when I have them in the garden and this was definitely a winner, quick and easy, just how I like my soups!

I did once make tomato and roasted red pepper soup - 8 litres of it! - for the Gdcs’ school 🎄fair. I used a recipe that turned out well - tinned toms and jars of red peppers, and it had to be vegan so the ‘milk’ was oat.

Transporting it all 60 miles was the problem - I scrounged some 4 or 6 pint plastic milk bottles from neighbours (ours comes in glass from the milkman) - very well washed first, of course.

I love fishy chowders, smoked haddock is so simple to make, though I know that not everybody likes their soup lumpy.

We love them too! I do one with smoked haddock, onion, a little bacon (pref. crisped up streaky) potato, the milk the haddock was poached in plus however much more, and preferably plenty of parsley. Sometimes a small tin of sweetcorn.
And a fish or chicken stock cube.

Oh yes, the sweetcorn is essential! Some people add carrot but I'm not so keen.
I try to use chicken stock from a roast chicken carcase or sometimes I poach a chicken in the pressure cooker then reduce the stock. I love that jellyish quality you get from good stock, if it tastes and smells good you don't need to add much of anything and it needs less salt.
Sometimes I thicken the stock with potato flour rather than adding potato to the soup, it gives a smooth velvety texture.
This is all making me very hungry....

I'm making Mexican Tortilla Chipotle Soup for 7pm meal.

Tomatoes (we've too many tomatoes), onion, garlic, chipotle, oregano, cumin, black beans, sweet corn, vegetable broth, water, salt, pepper.

Crushed tortilla chips and chopped fresh coriander - to serve.

Funnily enough, the last time I was feeling unwell, I took a notion for Heinz tomato soup - ewww, no never again! It was horrible - really nasty metallic aftertaste. I'll be sticking to homemade from now on.

I make tomato soup often. Lovely, warming, nice lunch.

1/2 onion, peeled, chopped, saute.
1 clove garlic, peel, grate, saute with onion last 2-3 minutes.
1 carrot, scrubbed, chopped
3-4" rosemary sprig, salt, pepper, fenugreek
1 cup water, cook all above until carrot is soft.
1 tin coconut milk
1 tin tomatoes, cook another 5-10 minutes.
Jug blender until smooth.
Serve topped with croutons or snipped rosemary.

I do make soups through the year but Heinz Tomato is my go-to when I’m feeling off colour. I like to stir some curry paste through it too.
Home-made chicken noodle is a good pick-me-up. I remember being very grateful to find it on the menu at a ‘Denny’s’ after along distance flight. A bowl of that really helped deal with the jet lag!

TBH I rarely use recipes. Tonight I’ll be using up the stock made with a chicken carcass the other day. Some sweated onions first, add stock, stock cubes and red lentils, then diced carrots, potatoes, celery, swede.

A few minutes before serving, add fresh veg (cauliflower and broccoli) and the last bits of chicken picked off the carcass before boiling it up.

If I had any suet I might add some dumplings, but it’s probably still a bit too summery for those anyway.

I make lovely soups, but I agree that Heinz Tomato soup is better than any tomato soup I’ve made, except for gazpacho.

I make lots of different soups often with vegetables from the freezer and stock made in the Instapot. So quick and easy. Frozen broccoli and stilton, pea and mint, curried cauliflower and tomato basil soups made in a few minutes are winter staples for lunch

I love making and eating soup but Dh isn’t keen. He isn’t a fussy eater but always comments ‘not soup again’. Haven’t made any through the summer but will start up again soon.

Mine is the opposite - he's already badgering me to make a pot of soup!

We love our soup, usually have a boll with some bread for lunch. My specialty is "fridge soup" : whatever I find goes in the soup 😅
