Home made oven chips

Tonight we are having Italian omelette, home made oven chips and salad.

I have been making oven chips the same way for years and wondered if anyone has any 'upgrades' we might like.

I parboil the chips, leave them to steam a little in a colander, rough them up a bit, toss in hot olive oil with a little melted butter and roast in a hot oven.

Ideas for variety very welcome.

If you like spicy food, a few dried chilli flakes mixed with the oil gives them a lift.

I don’t parboil, just spray with a little olive oil, then add garlic granules/paprika/chinese 5 spice or just chopped fresh herbs, depending on what else I’m cooking.

I've never got the hang of making them.

They end up stuck to the tray.

I don't even par boil mine any more, just cut them into chips , toss them in some rapeseed oil with some paprika and some salt , usually air fry at 190° for 20 mins or oven cook for at 200° for 30 minutes. I didn't see any difference than when I par boiled them tbh.

We bake them using one spray after slicing and par boiling. Allow to rest a bit, add salt/herbs if required. About 20 minutes in a flat tin on 200 depending on thickness. Check and turn as necessary.

Just a little change we like to do is small squares, think they might technically be known as parmentier or similar, delicious and not “just roast potatoes”.

We cut large wedges from baking potatoes rinse and dry then spread on one of those open based chip trays, spray with olive oil, dust with chopped chillis or cayenne and just cook... not need to par boil.

Yep, but I don't add butter to roast potatoes.

Actually, I usually use duck fat for roast potatoes or vegetable oil.

Slice, place in water, wait, drain, repeat, roast with a bit of olive oil, salt, pepper.

I'm with silverlining48 in that homemade oven chips taste nicer without too much oil or butter. Just a fine spray of fry light and a few sprinkles of paprika and seasoning.
I like my omelette slightly runny, so the drier version of chips soaks up the eggy slop!

Parboil, toss in salt, black pepper, paprika and olive oil. Bake on non stick foil.

Baking paper is a must under homemade sweet potato chips. They go very sticky.

It's strange because my roast potatoes don't stick.
Just my attempts at oven chips.

I end up with more on the tray than is on the plates.

When we lift our potato crop we parboil them, turn a few pounds into chips and freeze them on a tray before bagging them. Then when we need them we just turn them in olive oil and cook them in the oven. We do the same for roasties cooked in duck fat. Delicious.

Mamie, that is a good idea. I've never thought to do it, although I purchase frozen chips all the time, and they are getting expensive!

I find the way you do them is lovely. I sometimes add a thickly sliced onion and include it in the par-boil and roast so that it is all ready at the same time. I have an air fryer which gives similar results, but those done in the oven seem to taste better and can be done in larger quantity!

I drizzle olive oil over chips then garlic salt, pepper and paprika and bake on a silcone baking sheet, and try to keep chips separated. If in a hurry I might do quick blast of chips in microwave before oven baking.

I make chips the old fashioned way in a chip pan in oil, nowt better.
