Half a cucumber

DH is the only one in our household that eats cucumber. You used to be able to buy half a cucumber but I don’t see any now and I hate waste. Does anyone know who still sells them or what I can do with half a cucumber other than put it in the food waste?

I also buy the mini cucumbers, so easy to store and use.

I don't use anything special to store my veg but I do only buy from Tesco, they seem to keep fresh for long enough for me.

Except those avocados- I stopped buying those.

Fresh veg never seems to last well, these days.
A day or so, and they've had it.

Mine usually last very well. I always remove any plastic wrapping that makes them wet and much more likely to deteriorate, though. And I line the bottom of the salad/veg drawer with a tea towel, also to absorb damp.

One thing you can do with other half of a whole cucumber is to pickle it and have it with cold meat or in a cheese sandwich. Cut it up and pack it into a very clean jar that has a lid (preferably one that has previously held pickle, as the lid will be lacquered to resist rusting from the vinegar) And a few black peppercorns and/or other whole spices and top up with a mix of 50/50% or 75/25% vinegar and water, with a little sugar dissolved in it, put on the lid and keep in the fridge. This will not last as long as "proper" pickles, it needs to be eaten in a week or so or the cucumber gets soft, but it sparks up a sandwich or salad, and it is better than throwing it out.

i find a cucumber lasts a week to ten days in the fridge, no special protection - that is if it gets a chance I love cucumber and eat slices of cucumber as a snack.

I buy the mini cucumbers too. I am the only one in the house who eats cucumber now. Our little village shop will sell you half a cucumber as well.

Thanks Elegran.What a good idea. I have all those ingredients so might try it today if I can find a jar. I am in a culinary mood and am just having a go at making some stollen. I have never made it before so am a bit apprehensive.
I thought village shops might do it Primrose but unfortunately though I live in a village our one and only shop has closed down.

Greenfinch You may find that you prefer different proportions of vinegar, water, sugar and spices (or using cider vinegar or adding a chilli!) but you can adjust it to taste. Surplus peppers can also be pickled like this - those bags of three can become uneatable if they take too long for one person to use up.

I have just made some Elegran but now that you mention it I think I will add half a chilli. I found a jar by throwing out some out of date pickled onions which we bought to deter the moles but they haven’t been troublesome this year.

Cheese sandwiches are my favourite, and I love trying different things to go inside them.

My sandwiches- cheese &... saurekraut, gherkins, marmalade, brown sauce, chutney, branston, pickled onions, fresh peppers, fresh onions, peanut butter, preserved ginger, lettuce, tomatoes, radish, celery. Don't like cheese & ham though.

You could pickle a cucumber before it goes mushy .
My family don't particularly like them , but they do if I prepare them the Russian way :
I slice them very thinly , sprinkle them with salt and cover them with a weighted plate .
A lot of excess water comes out .
I don't know if it's really a Russian recipe !
If eating fish and I include fish and chips from local chippy - I make my own version of Bearnaise sauce using chopped cucumbers in mayonnaise .
It's less sweet and more tangy .
I've also made cucumber soup .

Having made those suggestions -
Buying half a cucumber might not be such a bad idea !

Waitrose sell midi cucumbers.

Came here to say the same. They are about the size of a half cucumber and seem to have more flavour than the regular ones. I can't tell you the price though but I'm sure it's not exorbitant.

Our local Sainsbury’s is selling baby cucumbers AND bare ones ie none of that stupid plastic skin on them.

I chop cucumber up to put it in the dog’s kong. He loves it!
