Half a cucumber

DH is the only one in our household that eats cucumber. You used to be able to buy half a cucumber but I don’t see any now and I hate waste. Does anyone know who still sells them or what I can do with half a cucumber other than put it in the food waste?

Not for me but the pickled cucumber that was mentioned up thread is beginning to taste nice though I guess it needs to be left for another few days.

My DH grows masses of cucumbers in the greenhouse and when the grandchildren haven’t visited for a week or so I have a surplus. I put them in a large jug of water in the fridge and they retain their crispness for 3 or 4 days.

This also works with larger cut cucumbers.

I presume this is because the water excludes the air, but that’s just a guess.

I was looking for inspiration through one of my cookery books when I came across this recipe for cucumber sorbet. It is far too fiddly for me but others might be interested. For 4 people you need 2 cucumbers,juice of 2 lemons and 125 gr icing sugar.
Peel cucumbers, cut in half lengthwise and scoop out seeds.
Chop flesh and put in mixer with lemon and icing sugar.
Process to wet purée. Refrigerate for about an hour.
Put in plastic container and freeze for one hour. Mash with fork. Freeze for another hour. Mash. Repeat at hourly intervals. Let freeze solid. Transfer to fridge 30 mins before serving.

I'm going to buy some salad bits later, and try out my new bags.

You can use them in the microwave too, to cook your veg, which is handy to know.

I do the same with Romaine lettuce that's gone a bit limp. I cut the dry end off the stalk and stand the whole lettuce in a glass or jug of water.
It's amazing how much it perks up after a few days 🙂

I've discovered that the best way to keep salad veg. fresh is to wrap it in a sheet of kitchen towel and put it in a plastic box lined with piece of old fabric tea towel. It stays fresh for much longer.

Sainsbury's sells packs of Baby Cucumbers, approx. 5 in a pack. They're ideal because they are dainty and manageable unlike the full-grown monstrosities.
