I mentioned that I have a surfeit of pigs in blankets, and there are dozens of them in the freezer. Mr Dog is vegetarian so using them up isn't as easy as it might have been.
People suggested a pigs in blankets casserole, which is a great idea - particularly as I have friends coming for an informal supper tomorrow, they are all meat eaters, and Mr D won't be there. I've googled, and there are various options, ranging from one using a packet of sausage casserole mix to slightly fancier versions. Some have traditional veg such as carrots and parsnips, and others more Mediterranean ones such as peppers and courgettes, and I'm not sure which way to go.
I have a grocery delivery coming tomorrow, so can add any ingredients I don't have in, but wonder if anyone has a tried and tested recipe they don't mind sharing, please? There will be four of us.
As I say, this is an informal thing, so it doesn't have to be 'impressive', but obviously the tastier the better. I do have time to faff if necessary, and am equally comfortable with using a casserole mix (they are basically herbs, spices and cornflour, I believe), but a recommendation would be really helpful if anyone has one.
