Perfect Egg Mayonnaise?

So, I’ve just made some for our sandwich tonight, as we had our main meal at lunch time.

This is what I do,

Shell hard boiled eggs (for two of us I use four medium sized free range)
Cut them into pieces in a large bowl.
Add Mayonnaise (Helmens light)
Add a tiny bit of butter
Salt
Pepper
Cayenne Pepper
Sometimes some dried crushed chillies.

Mash up well.

Add to lightly buttered brown or granary bread, cut into two or four.

Gobble up.

How do you make yours (if you eat it)

My daughter uses just hard boiled eggs and salad cream 🤮🤮

Very similar to you, 4 large eggs for 2 sandwiches.
Helmans Mayo, salt and pepper, butter.

I think so.

Oreo have you ever added anything else to your sandwich or whatever you’re using your egg mayo for? Like bacon or avocado?

Also really nice with some chopped up chives in it, if you happen to have any.

The essential extra is either cress or lettuce (chopped). Or both.

In Northern Ireland, they add chopped onion. I don’t think I have ever seen an egg mayonnaises sandwich without onion.
Personally, I enjoy egg and tomato. The tomatoes need to be diced though.

I never add anything but DH likes his with salad cream rather than mayo - philistine.

Dd2 does a fabulous one with chopped bacon. Mine isn't half as good as hers so it's a treat every time she comes.

My Mum used to make egg and tomatoe sandwiches. Boiled egg, salad cream and mashed potatoes unskinned tomatoes. All mashed together , pinch of salt. Heaven !

We buy our mayonnaise from the international section in Tesco, its Polish, much nicer than Helman's.
As for the sandwich filler.
Eggs, half and half salad cream and mayonnaise or Heinz sandwich spread if I have any. A little salt and pepper.

I really don't like the "light" version of their mayonnaise.
I used to make my own when the "children" lived at home.
Now just keep a jar in the fridge.

For seven of us I used to get out the potato masher and mash the eggs into the mayonnaise in a flat bottomed bowl with some extra (black) pepper.

NO tomatoes with egg mayo!!! 😱😱
...just watercress or rocket occasionall.!

Does anyone make their own mayonnaise?

I’m still a bit annoyed after an incident when a lot of us were staying at a BiL’s huge place in France. BiL was hosting an alfresco lunch for several locals, as well as us, and I offered to make my usual potato salad - which invariably vanishes PDQ. I always add chopped chives, or the green of spring onions, and lemon juice, plus a little S+P, to the mayonnaise.

While I was mid-make, I realised that there wasn’t enough mayonnaise, so said I was nipping to the local supermarket for more.

Another BiL - a Francophile and Foodie with a capital F, almost screamed, ‘NOOOO!’ - you’d think I was suggesting going out for ground glass or arsenic!

He insisted on making mayonnaise with eggs, olive oil, etc. and I don’t know what he did or didn’t do, but it just tasted oily, so lacking in flavour, and most of my potato salad, that usually vanishes, was left uneaten and ended up in the bin.

Needless to say, any other time I will be much firmer about making it my own way!

An extra egg yolk, cress and full mayo with just a bit of ground white pepper. Butter bread in just one side.
