Perfect Egg Mayonnaise?

So, I’ve just made some for our sandwich tonight, as we had our main meal at lunch time.

This is what I do,

Shell hard boiled eggs (for two of us I use four medium sized free range)
Cut them into pieces in a large bowl.
Add Mayonnaise (Helmens light)
Add a tiny bit of butter
Salt
Pepper
Cayenne Pepper
Sometimes some dried crushed chillies.

Mash up well.

Add to lightly buttered brown or granary bread, cut into two or four.

Gobble up.

How do you make yours (if you eat it)

My daughter uses just hard boiled eggs and salad cream 🤮🤮

We add chopped spring onion as well (as a Jewish dish). Also tahini and sometimes chopped picked cucumber. It is delicious but the onion makes it rather ant-social, so I wouldn’t take it to work!

I also add to the eggs and mayo - finely chopped gherkins and sometimes chopped capers..

I think I could happily live on what my family call squishy egg sandwiches. I have a brilliant egg slicer, after slicing I turn in around and slice it the other way so not too much squishing to do. Add salt and pepper, a little mayo and salad cream. Also any salad vegetables if available. Heaven.

Tiniest amount of mayo just to stick the egg together, mash with a fork, salt and pepper....and chopped cold water prawns! Not strictly an egg sandwich but totally delicious

I think I could happily live on what my family call squishy egg sandwiches. I have a brilliant egg slicer, after slicing I turn in around and slice it the other way so not too much squishing to do. Add salt and pepper, a little mayo and salad cream. Also any salad vegetables if available. Heaven.

My late MiL had a great egg slicer - unfortunately, when she moved into a nursing home and we were clearing out the house, my idiot of a husband threw it out, because I'd had my eye on it! grin

Cossy, I am with your daughter 100%. Mayo is just tasteless fat in my opinion. No wonder you have to add so much to it to get any flavour!

At a catered event recently we had egg sandwiches, the like I'd neer tasted before. I asked the caterer what was the secret ingredient. I was told no secret ingredient, just well mashed eggs, half and half mayonnaise and salad cream with a little salt and pepper. They were delicious.

I prefer ssalad cream to mayo, I find mayo too bland. my egg mayo is made of eggs, butter, salad cream, salt, pepper and chopped chives. Can't eat brown bread so I'd just used white bread or roll. Just make it how you like it, no right or wrong way.

I do the same as Cossy but without the butter and with a mild Korma powder in lieu of the paprika. Oh, and I add a few Flame raisins to the mix.

Lovely taste - like Coronation Chicken but made with eggs!!

I've only used it as a sandwich filler but I'm wondering now if it would work as a Baked Potato topping?

P.S. I can't ever reply to lead posters as giant annoying advertisements cover the link to do so on their postings
Does anyone else have this annoyance?

Chop eggs finely. Add salad cream and a dollop of sandwich spread. Mix well. Gives a slight tang to the eggs.

It's so interesting to see the different words used for things. In the U.S. the same thing is called egg salad. I like to add a little bit of yellow mustard to mine. I have started using Duke's mayo because it's sometimes cheaper than Hellman's and I like it better anyway.

Olive oil really makes it taste bitter.
There are instructions on the internet for making mayo at home with a stick blender, it’s very easy with none of that oil being added drop by drop!
Egg mayo my favourite sandwich filling of all time, had it in Venice once with artichoke hearts and it was lovely.

I must be a bit of a heathen because I only really like egg sandwiches made with salad cream even though I don’t like the stuff in any other form. Mayonnaise just doesn’t taste as good to me.

The extras people are mentioning made me think of Irish Funeral sandwiches which every funeral over there seems to have and they are delicious. My Mum also often made these for us.

Hard boiled eggs, mashed with half and half mayo and salad cream and salt and pepper. Add finely chopped tomato, finely sliced spring onions (or scallions as they call them)and a couple of finely chopped lettuce leaves. Mix all together.

Must be on very fresh bread with real butter.

I buy it. Usually from Lidl or Aldi.
Wouldn't dream of all that construction work just to eat it.
I prefer ones that have a good ratio of bricks to mortar.
Some sloppy ones have too much mortar.
I don't buy those again.

Ps. Anyone concerned about the salmonella outbreak from imported eggs. ?
