Perfect Egg Mayonnaise?

So, I’ve just made some for our sandwich tonight, as we had our main meal at lunch time.

This is what I do,

Shell hard boiled eggs (for two of us I use four medium sized free range)
Cut them into pieces in a large bowl.
Add Mayonnaise (Helmens light)
Add a tiny bit of butter
Salt
Pepper
Cayenne Pepper
Sometimes some dried crushed chillies.

Mash up well.

Add to lightly buttered brown or granary bread, cut into two or four.

Gobble up.

How do you make yours (if you eat it)

My daughter uses just hard boiled eggs and salad cream 🤮🤮

The extras people are mentioning made me think of Irish Funeral sandwiches which every funeral over there seems to have and they are delicious. My Mum also often made these for us.

Hard boiled eggs, mashed with half and half mayo and salad cream and salt and pepper. Add finely chopped tomato, finely sliced spring onions (or scallions as they call them)and a couple of finely chopped lettuce leaves. Mix all together.

Must be on very fresh bread with real butter.

Oh yes, now you're talking - Irish funeral sandwiches are amazing!
And no, not at all worried about salmonella because we only get our eggs from two local smallholders very close to where we live.

Am I the only one who just had to have an egg sandwich for lunch after reading this thread? Hit the spot for sure!
I’ve always made mine just with salad cream but mixed it 50:50 with mayo today - much creamier and less acidic, thoroughly enjoyed. Will try with chopped tomato mixed in tomorrow.

When I was growing up we didn't have mayonnaise, we just mashed up the egg with a little butter, pepper and a dash of milk.

I had this today between two slices of granary bread and a little salad, it was very nice smile

I use chopped up hard boiled eggs with mayonnaise and snipped up homegrown chives and some salt and pepper. Delicious!

Definitely would not want it with tomato. I hate egg and tomato together. No curry powder or paprika either. Just eggs, mayo and fresh snipped chives.

I find it better to grate the hard boiled eggs for a smoother texture then add salt & black pepper and mix with Heinz salad cream.

Love an egg salad sandwich but it must have a big pile of cheese and onion crisps on the side.

Just caught up with this thread and have just put eggs on to boil so I can make some for lunch. I like tomatoes on the side, with them. I read recently that we should be eating more eggs in our diet, as they are good for cognitive effects too!

I buy Bramwells real mayo from Aldi these days. I think it has less additives than other mayo’s ( but can’t read the ingredients without my magnifying glass which I can’t find).

I used to live near a Jewish deli that did an egg and onion mixture, all finely chopped with mayo. It was delish and went very well on their warm, fresh beigels. Still wish I lived close enough to do the Sunday morning deli run.

When I saw the title I thought you were asking for a mayonnaise recipe, which is of course just egg and oil, with a bit of mustard and lemon juice.

As for an egg salad sandwich....

Yes it’s popular but not by me, I can’t stand the taste of onions.
