Raw is a good way to eat them. However, retain the good-for-you nutrients in beetroots by roasting them or sautéing them instead.
I grow a lot. Just found a new recipe for roasted beets and feta cheese. Make beetroot cake - quite often. Pickled some the other day, Just have to watch out for a change in colour when you visit the loo!

In addition, people in one study who drank roughly a pint of beet juice every day significantly lowered their blood pressure. It’s also a misconception that people with diabetes can’t eat beets because they’re too high in sugar. For one thing, people with diabetes can eat any food, and for another, beets really don’t contain all that much carbohydrate.
So, I'll carry on eating lots and lots of beetroot.
