Abbie will take time to settle, maybe months before she feels really safe and at ease. Sounds like she's doing well do far though.
We foster cats, often we don't know their history, but some flinch if we wave our arms around etc, you can only guess what horrible things might have happened to them in the past, and give them time to know and trust you. Talk in a low loving voice to her. Maybe have an old fleece blanket on the settee near you?
Our cats often like the corrugated cardboard scratchers. Quite cheap. A favourite game is a long feather or thin plastic stick, under a small rug, large newspaper, or small blanket. They watch us gently moving it under the rug then pounce.
I'm sure shell settle happily with you, a lucky cat to find such a loving home.
