Low-carb support thread 2016 Part 2

The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.

You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.

Anya Will try roasting kale - it's just that it tastes well "good for you" if you know what I mean. Where do you get pasta from please?

My DD did massaged kale for us. She kneaded it with olive oil for about 20 minutes. It was - interesting.

Any tips Mamie on a maintenance diet? I don' t want to lose much more weight but still keep BG low.

Breakfast is now muesli and yoghurt, spelt toast with butter and marmalade. Lunch soup or salad plus some fruit (not so much for OH who had the pre-diabetes before). Dinner mainly low-carb, new potatoes from the garden a couple of times a week at the moment, spaghetti once a fortnight or so, rice very rarely. We know when we have overdone it and go strict low-carb for a bit. Puddings only a few times a year.
Carb portions about 50g each. Wine when we feel like it. grin

After the weather we have had here the last few days I am also thinking about what to eat in the winter. After salads for lunch every days and berries for dessert there will have to be some re-thinking, especially as OH has decided he is not keen on cauliflower. I know there is always soup but I tend to put pearl barley and lentils in mine, what do others do to get thick soup?

Lazi I ordered that pasta online from Holland &Barrett.

My tiger nuts arrived this afternoon. I soaked them for a couple of hours and chewed a few (6 or 7) this evening while watching TV. I know they have carbs in them, but also a valuable source of fibre, vitamins and minerals and just a handful satisfied.

Tizliz to thicken soup I just use less water. But do remember this is a low carb régime, not a no carb one, so a few lentils etc are not out of the question. I suppose it depends how strict you are trying to be.

I avoid sugar like the plague, but as I'm going alcohol free at the moment I allow myself some ginger squash. Potatoes I eat almost never, except a few new ones in season, rice not at all, pasta (see above), bread hardly ever. But I do eat tomatoes, a few carrots and peas and beans all of which have carbs.

Lunch was celery sticks with tarmarsalata, and dinner was chilli con carné, with salad followed by Greek style natural yoghurts and the aforementioned tiger nuts.

I seem to have lost my way . Have put on 3lbs ! Will re-read Diet Doctor rules and get back on track . Chicken with cauli mash tonight !

I had lots of carbs over the weekend , out and about , eating ,over the last week plus . I feel stodgy and yes, my dodgy legs are swollen , I'll take a water tablet !! I'd forgotten how carbs swell me ! I'l report back !

OK. Strict low-carb and lots of water are needed, I think.
My bloody fridge has stopped working. It must be about 1 day out of guarantee. Have emptied it and unplugged it, then will try it again overnight.
Then I will practise my very cross French vocabulary to go and shout at the so-called "service client" tomorrow. angry

Good luck with that Mamie. My husband ( who has much better French than me), is unendingly polite, but tenacious with it when he needs to rant complain. He ignores any hint of a Gaelic shrug, and almost always succeeds in getting a reasonable result.
Hope the switch on / off works.

Well our temperamental French fridge had a nice rest overnight and is now working again. smile
How are you doing tow?
It was so cold this morning that we decided to have sausage chilli tonight, but now the sun has come out and it is 25°.

Same here in the Jura - was 10 C when I left at 10.30 to go to physio, and she said it was 2 C when she left home! Lovely and warm now, 25C- perfect for me.

Day 2 of no carb apart from porridge with seeds in the morning. I find it soooo hard - and yet I know I must lose weight to help free my new knee to go beyond 115 degree bend and straighten totally. Not making excuses here, but I have hypo-thyroidism and am on insulin- and that makes it even harder. Hopefully will be able to reduce insulin as I reduce carbs- and it will help.

Grated carrot and courgette for lunch, mixed with a few seeds, bressaola and mozzarella.

Good to see you back on the thread - lunch sounds nice!
It is very strange weather, cold at night, warm in the day and a constant wind. We have had no rain to speak of for weeks. We spend hours watering!

Miracle happened overnight , up 4 times peeing ! My face looks gaunt this morning and the legs much lighter ! Carbs really are the enemy . Will continue on, without looking at the scales for a while , then hopefully results will show !
I'm glad that you had a miracle of your own overnight !
