Every Sunday I cook a roast dinner for my family, including grandchildren age range 2-14. I always do a different pudding which goes down very well but I’ve set the bar high and it’s getting harder to find something extra special. Today I made a Rolo tart and also an Eton Mess. Please can you suggest some unusual scrummy desserts that have become your favourite recipes. If they can be prepared the day before it would really help!! Thank you

Heres one that's always a hit in our family, though I only generally make it in the summer when raspberries are in season. Its known as Mum's Raspberry Thing.
Pick enough raspberries to cover the bottom of a shallow bowl. Sprinkle with just a little icing sugar and top with equal quantities of double cream and greek yogurt mixed together (it will thicken) Sprinkle with a good layer of muscovado sugar. Cover and refrigerate overnight. Very simple and delicious and no effort at all.

Pavlova with lemon custard and fresh raspberries or Key Lime Pie with crushed ginger biscuit base.

When I go somewhere and contribute a dish, I make a dessert I know as 'Chocolate Cream Sophie', although I cannot find a recipe under that name online.

Essentially mix breadcrumbs, cocoa and brown sugar and whip a pint of cream. Put half the chocolate crumb in the base of a glass bowl, put a similar depth layer of cream on top and repeat. Chill. The layers can be seen on the side of the bowl and whenever I serve it, it disappears very fast. I never take any back home with me.

Delia Smith (may her name be ever praised) chocolate truffle torte.

Keeps well in the fridge for days, but you will need to source the liquid glucose. Last time I made it I had to ask a local chemist!

Sherry biscuit log goes down well with the adults in our family.
Dip both sides of a chocolate chip cookie in sherry, sandwich together with whipped cream (sweetened or not, it's your choice). Shape into a log and cover with more whipped cream. Sprinkle the log with crumbled Cadburys flake. Refrigerate over night.
I make a non alcoholic version for the children using orange juice in place of the sherry.

Or, often requested, pavlova with any seasonal fruit and cream.

I make s version of the biscuit log with white wine or apple juice. But I layer in separate dishes. It's also nice with ginger biscuits.

Bread and butter pudding is nice and can be put together the day before. I make it with saffron cake instead of bread.

Today my DD made a lovely trifle using a pouch of peaches, a lime jelly, sponge fingers, Waitrose vanilla custard and whipped cream. It was so yummy. I do love a trifle. Goes down well after a roast.

Meringue Nests topped with Muller Lemon Yogurt , very nice and easy

Bananas chopped into hot custard

Mixed tinned or frozen fruit with crumble topping

Swiss roll chopped and served with hot custard

phoenix liquid glucose is much easier to get hold of these days. People use it to make soft icing. Most supermarkets have it.

Mary Berry's Lemon Fudge Cake, from her One Step Ahead book- make it the day before then just top it on the day. It is dead simple and absolutely delicious.

I have a lovely recipe for raspberry and chocolate (gooey) brownies which I serve with raspberries, cream or plain yoghurt and chocolate icecream.

Bread and butter pudding made with either brioche or panettone instead of bread is very easy, quick and is always gobbled up.

Almost any traybake is good warm with custard!

I've made several kf the above, most especially key lime pie. Pavlova, Eton Mess.

Tonight we shouldn't have had pud after the Christmas excesses but there was some nice Waitrose custard to use up so I made a very small apple crumble with scrumped apples and crumble topping made earlier and frozen.

Bread and butter pudding with brioche is good too. I add some raisins or currants or spread the bread with marmalade.

Orange and dark chocolate cheese cake.
Made one for Christmas and just finished it off!!

Rose water and choc mousse decorated with a rose petal. I generally do this for Valentines day.

Delia's sticky date pudding with nuts and toffee sauce.

Hazel nut merengue with brown bread icecream
or pistachio merengue with raspberries and rose flavoured cream.

Oh dear now I'm thinking of deserts!

My families favourite is Delia’s Squidgy Chocolate Log. A roulade lined with chocolate mousse and cream.
