Cooking for the coronation

Staunch Republican here, so I’m only making a quiche, Victoria sponge and coronation chicken 😄

There will be 8 of us. I'm making quiche × 2, rolls filled with ham, cheese and coronation chicken. We have bought in cake, crisps and nibbles. For dessert I have meringues, soft fruit and cream.
I'm not making it into a big do. grin

Coronaton chicken and trifle for lunch. What in our family is known as 'a dainty tes' in the evening, sandwiches scones and cake. I might even get the best china out.

Daughter is making quiche and coronation chicken I am making sausage rolls and we are having scones and strawberries. A bit carb heavy but we can eat it all in front of the tele and have a more healthy hot meal in the evening . Having friends around for a barbecue on Sunday

A buffet to snack on through the daytime while watching proceedings on TV.
Ham sandwiches, smoked salmon and cream cheese sandwiches, quiche, chicken drumsticks, a fruit salad, scones and jam with clotted cream.
Lime cordial and soda to drink.

Coronation Chicken here - which will be reprised on Sunday when family come to lunch.

We’re having a buffet. 13 of us. Coronation chicken, the quiche if it turns out well, dainty sandwiches (ham, smoked salmon, cucumber and cream cheese pinwheels), French bread, houmus and cheeses. Pickles and crisps. Followed by chocolate cake, lemon drizzle tarted up with blueberries and strawberries as a Union flag, and gingerbread kings if I don’t run out of time. With Pimms and fizz and nonalcoholic offerings.

Veggie, dairy-free and gluten-free options mean that we’ll have to get a lot of sandwich flags written up this afternoon. smile

I had my staff provide food for tomorrow. My chefs are Mr Marks and Mr Spencer. Their food is in my fridge and I’ve given them tomorrow off. grin

I’ve just used it as an excuse for a bit of a gathering, to be honest, though we will be watching. There must be plenty of parties going on locally as you can’t buy a piece of coronation flimflam anywhere! We’ll be using Easter napkins with rabbits on them.

I’m going to a Congressa da Sopa. €5, all the freshly made soup I can eat, rolls made with locally ground flour, and nary a peep about the coronation.

We are having a street ( close) party. We have permission to shut the close off tomorrow morning.
That’s when we’ll all muck in with bunting and tables. If it’s anything like the last 2 there will be mounds of food.

There will be six of us, we're starting with Bucks Fizz and Mary Berry's Herby Cheese Toasts plus crisps to nibble on during the ceremony, then we are lunching on Chicken A La King (bit of a change from Coronation Chicken) plus a shortbread-based open fruit tart, I'll do the raspberries and blueberries in the Union flag pattern.

Got a pack of gold paper crowns too, not wearing one is not an option!

On Sunday our local village hall is hosting an afternoon tea and on Monday there's a street party.

Would like to say that a Coronation is an unmissable once-in-a-lifetime event, but this is our second ...

I’m quite surprised at how well my Coronation quiches have turned out, both the conventional one and the gluten and dairy free version. I grumbled a bit about about the faffy pastry prep, but yes, they’re looking good, if I say it myself. Fingers crossed they taste it as well.

Off for a walk to our local B & M now to see if they have any suitable cake decorations left and to grab some little prizes for the grandsons’ games tomorrow. Last minute, me? grin

I have done all the cooking for tomorrow. Coronation chicken and the accompanying rice is cooked assembled and in the fridge, ditto the trifle. Scones have been mixed, cut out and frozen uncooked and I will just take out two each tomorrow and cook when we need them - in the air fryer, of course.

All I will need to do is make the round of sandwiches to go with our afternoon tea. The cakes have been bought in.

Welsh lamb chops requested by my mum. I'll see if I can find some Jersey Royal potatoes to go with them!

Tea will be the usual soup and a sandwich, maybe with a jelly as it's a special day.
