I was going out for lunch with a friend but she's tested positive!

My fridge is a bit bare so I'll have to raid the cupboard and freezer, and having the last two champagne truffles from Mother's Day smile

For lunch today I made this, www.abelandcole.co.uk/recipes/spice-buttered-whiting-with-golden-chips
DH said it was the most colourful meal I've ever made for him.
It was delicious, better than it looked in the picture.

I had rice cakes with peanut butter and mashed banana on top. Dinner will be smoked haddock, fresh cabbage and a sweet potato.

Peppered mackerel and gherkins a for light lunch. I prepared bruschetta king prawn with pasta and made tiramisu for a treat tonight.

Enjoy those champagne truffles Riverwalk.
I’m on my own for lunch so will do a jacket spud and use up some cottage cheese. For dinner I’m getting some mince to do mince and mash because DH is having an endoscopy but one where he’s asleep as it’s a bigger camera so they’ve advised his throat will be sore so he needs something soft. He loves that meal anyway.

Before throwing the box away I idly looked at the 'nutritional information' - 98 calories each shock

I love seeing what everyone is eating.

I'm low on vegetables and need to do a bit of a shop - recently been very into sweetheart/hispi cabbage! ?

Lunch was a bowl of bran flakes, didn’t feel hungry after a disturbed night and a horrible dream that shook me up.

I think tea will be minestrone soup.

I’m having a right pig out day today. But didn’t plan it that way. Had my jacket spud as I said. Bought some chocolate raisins from the garage when I got petrol. Just finished of my grandsons pancakes he didn’t eat. I think it’s the shock of the petrol price that caused me to over eat. My DH is fine after his procedure so can’t blame that. My mince and veggie mash is ready to cook. I adore hispi cabbage Riverwalk.

To use up the leeks and baby spinach from lunchtime I'm making leek pea and spinach soup for supper. I'm going to have it with a crusty roll.
DH is working until 8pm so it will be perfect to reheat when he comes home.

Not the healthiest lunch today but we do usually eat lots of homemade soup or a salad. However today I shopped at the local farmshop and their pork pies are lovely so one of those with some piccalilli. Dinner is homemade veggie chilli with whole grain rice and some kiwi for afters so guess that's pretty healthy.
