What's for lunch and dinner today?

It's 09.30 and my thoughts are turning to lunch.

Jazz dance class later so will have my usual smoked salmon and scrambled eggs - something light to keep me light on my toes!

No idea about tonight... maybe salad, something from the freezer, odds & sods from fridge, who knows smile

Lunch will be the usual scavenge in the fridge. Tea (Yorkshire dinner) will be rump steak and salad.

I am laid low with covid so lunch will be anything my husband finds in the fridge. Dinner tonight will be a ready made moussaka that I am sure I have lurking in the freezer ??

This made me laugh.

I agree Rosina and I would like to do the same, but for the menfolk in the family there has to be some meat and either rice or potatoes or pasta as well.

Lunch is a ham salad
Dinner is steak, chips French beans and corn relish that I made last week and will give it it a go tonight.

Well it looks like I have diabetes now to add to my cancer …so any dietary advice is welcome. Very hard as I’m not a huge fan of vegetables…..

Try to eat low carb so restrict bread, rice and cereals, there is a lot of low carb diet information online. Oats are good, not too much fruit - berries are best. No sugar or processed foods. DH has controlled his diabetes and avoided medication for four years now through diet. He isn’t a fan of vegetables either, he eats a lot of baked beans, reduced salt and sugar, which seem to be good for him.

Anything that doesn’t require the oven to be switched on although I don’t mind cooking a piece of salmon or chicken in the air fryer.

Went out for bacon sarnies then picked 10 courgettes from allotment!
Dinner is chicken and veg kebabs with home made potato salad! Eating much less in this heat ! Courgettes are thrown into everything though ??

It’s fridge-foraging meals here for the next few days, I cannot be bothered to even think about meals. We won’t starve.

We still feel stuffed after our granddaughter's graduation party last night so I think it will be salads all day.

Nothing, same as yesterday... after paying rent and some of the council tax, and the travel costs to get son to school, there was literally not a penny left, so we're on a water fast diet for a few days yet!

Please have a look at the Olio app - it's primarily intended to prevent food waste, but clearly would be of help in your situation.

Lunch will be "Venison steaks" (minced Venison mixed with pork) with Jersey potatoes, green beans, carrots, cauliflower and roast potatoes, with a (bought, frozen) Yorkshire pudding for my husband.

Supper will be Sandwiches and Strawberries.

Yes many of us are comfortable and why should we apologise for that?
We are a good community here on Gransnet and we know that there are a few of us that for various reasons struggle however these members are quite happy to participate in such threads.

Finally many of us are supporting foodbanks and other good causes with our time and or contributions.

Now I’ve dealt with Alison I will tell you about a weird and wonderful salad I’m making to go with our BBQ this evening.

It’s watermelon, feta cheese, chilli, mint and pickled onions.

My daughter has assured me it’s delicious, I will let you know.

Thursdays BBQ went really well, my friend is a professional chef, she does private dining dinner parties etc so I’m always apprehensive!
I think she is happy that someone else is cooking and hasn’t complained yet!

This evening I’ll cook a chicken leg and a small portion of Charlotte potatoes in the electric pressure cooker (seven minutes) and eat it with steamed veg.

I made some Café de Paris butter for the freezer yesterday so I’ll treat myself to a small knob over the chicken. Yum!

Salad all day long.
Cold meat with lunch time salad with crusty roll and Salmon that I poached earlier later on this evening. Fresh fruit salad and a bit of ice cream. Yep that will do us very nicely indeed.

I'm on my own so toasted tattie farls for lunch then steak, chips & french beans for dinner. I've just cut up a pineapple and a melon so will snack on them in between. N.Ireland warm today, to get hot tomorrow, but if I was having the heat like some of you ladies I'd be on salads too.

I'll cook some chicken portions today then there'll be enough for tomorrow too, with salad.

Café de Paris butter sounds lovely, better than attempting gravy in this weather - how do you make yours, merlotgran?
(I made some plain salted butter the other day ? )

If unable to get out to shop like me at the moment, then store vouchers can be donated too.
