What's for lunch and dinner today?

It's 09.30 and my thoughts are turning to lunch.

Jazz dance class later so will have my usual smoked salmon and scrambled eggs - something light to keep me light on my toes!

No idea about tonight... maybe salad, something from the freezer, odds & sods from fridge, who knows smile

We are all aware that there are those who cannot have choices, who have a life constrained by their circumstances, and cannot eat as they would like to. Because I do have some choices in my life and diet, I am rather knocked back at being regarded as 'disgusting'. What a spiteful and unnecessary post AlisonKF Has the heat got to you?
Prentice in this kind of weather, if anyone wants to eat something that needs cooking I'm afraid they are going to have to do it themeselves - I'm useless once it gets past about 78. You are clearly a kitchen heroine - well done that woman!smile

^I made some Café de Paris butter for the freezer yesterday so I’ll treat myself to a small knob over the chicken. Yum!^

I'll cook some chicken portions today then there'll be enough for tomorrow too, with salad.

Café de Paris butter sounds lovely, better than attempting gravy in this weather - how do you make yours, merlotgran?
(I made some plain salted butter the other day ? )

It’s one of those Everything but the kitchen sink recipes!

Butter, anchovies, capers, garlic, chopped shallot, Worcestershire sauce, curry powder, paprika, Dijon mustard, lemon juice, tarragon and parsley.

I don’t measure anything but use a teaspoon as a rough guide. Just whizz it all up in a processor or mash it with a fork, tip it on to clingfilm and roll into a sausage for freezing. Cut into slices for serving.

I’ll be needing it on Tuesday evening when I have the family round for what DGD calls, ‘One of Granny’s weird and wonderful burger nights!’ ?

They never know what flavours they’ll be getting. This time it’s Middle East inspired so I might rename the butter. ?

Just eaten lunch of roasted gammon ….jackets….salad. It was lovely.
Tonight there’s a sandwich or stonebake meat-feast pizza ! I opened bottle of red wine and am working slowly through it. Prefer to be half-cut during the next two days, but with a disabled hubby …. that’s a no-no! Unfortunately !

Bowl of orange segments and grapes for lunch. Roast chicken with vegetables and new potatoes from veg patch. I made a mixed berry cheesecake for dessert.

Salmon fillet which I cooked earlier, new potatoes, broccoli and green beans.
Later I will have a sandwich of h.b. egg on brown bread.
Recently reached the threshold for diabetes, so am trying to eat less generally, with healthier options where I can, but in general my meal plans meet with the nurse’s approval.

We decided on baked beans on toast for breakfast/lunch. Tea will be salmon omelette and salad.
For those who think we are bragging/lucky/smug, believe me I have had many years where I struggled to feed my family, as did my mother.

It is too hot for me to look at my air fryer so yesterday I bought cooked pieces of chicken and a small prepared salad. Perfect for two suppers on my own. No wine because I opened and finished a bottle of dry white at the beginning of the week.

I had a late breakfast of toast with a banana so that was more of a brunch.

I think many of us can remember the worry of those days.

Today will be anything with courgettes!
As will tomorrow
And the next couple or three weeks ?

Ham salad sandwich here at lunch
Salmon fillet with chilli sauce stir fry and noodles for this evenings meal. Cooks in a few minutes

Newgran it is too hot for me to think about having fish and chips, preferably bought from the shop.

I am only really a fan of salad in this scorching weather because it is too hot for me to even boil an egg.

For anybody interested, I worked hard for my pension after 40 years of hard graft and to save money in my "retirement" I found 3 small part-time jobs. It is easier to find work in London but it is more expensive to live here.

My apologies if I dine too well on cooked chicken and salad.

Sorry AlisonKF, but I am also a member of the GN foodie club, so look away now.
Lunch was a barbecue, salmon and prawn kebabs with halved big tomatoes sprinkled with garlic, parsley and olive oil. Dessert was strawberries.
Sorry too late now for a picture, but here is evidence of what was drunk between us two!
Tonight is breadsticks and homemade hummus, and open sandwiches with ham, cucumber, tomato.

We produce enough food which is just wasted in this country to make millions of meals for hungry families.

Supermarkets need to be made to feel guilty as they reject perfectly edible food produced by farmers and waste stocks of food near its sell-by date too.
Luckily there are people out there with the initiative to try to improve this situation who will take this food and distribute and sometimes cook it, but we should not be made to feel guilty about this.

Well, if those who can afford to eat did not give to food banks then they would not be able to continue.

our local co-op distribution centre donates leftover fresh food to the food bank as does tesco to another, so i don't think it's all wasted - fortunately

Yes, I think they are all more aware now since Hugh's War on Waste but there's a long way to go!
