Thought we needed a shiny new thread for the New Year.
The thread is intended to support people who are already on the diet or want to start losing weight / gaining health benefits by low-carbing.
Here is a simple explanation of this way of eating and how it works.
www.dietdoctor.com/lchf
You do not have to count calories, weigh anything, exercise furiously or feel hungry.
You do have to cut out sugar and sugar-substitutes and avoid starchy foods like potatoes, bread, rice and pasta.
You need to eat lots of vegetables (especially those grown above ground) and protein which can be cheese, eggs, meat, fish etc. You can eat olive oil, butter and other natural fats. You can eat limited amounts of fruit, dark chocolate and some alcoholic drinks in moderation.
You need to avoid anything labelled low-fat and most processed food and drink.
Here is a link to the Mumsnet low-carb bootcamp thread, for those who want to lose weight more quickly than the diet adopted by most people on the existing Gransnet thread.

Here is a link to the original Gransnet thread - though there is absolutely no need to plough through it before you start. grin

Love this low-carb explained in 60 seconds link.

Some good looking recipes too.

Thanks, Mamie, great explanation and I have copied some recipes.

This thread has been a great support and menu inspiration whilst I struggle with the 8 week diet, especially difficult over Easter entertaining family, out with friends etc. And I don't want to become a diet bore. I have kept to carb less main meals as far as possible and a bit despondent as only lost about 6lbs in about 5 weeks. My main concern is not weight loss but that my pre diabetes does not progress to Type II. My DH has lost more weight and he isn't trying! Main weakness is beer at weekends, which is a treat and I know it's loaded with sugar but finding difficult to give up. Help. Could you share your cheesecake recipe Pippa000 please?

Anya Fri 01-Apr-16 18:23:10

Just have to flag up this recipe.

Anyone seen the recipe for Persian Chicken on the front of this months Sainsbury's magazine? Well I've just tried it and replaced the rice element with raw cauliflower rice ( which is then cooked inside the recipe)

It was Absolutely Delicious and so filling ... a must try treat grin

BBbevan Fri 01-Apr-16 18:31:44

Keep at it Lazigirl. They do say it is much easier for men to lose weight than women.
Are you drinking enough water. 3 litres a day is recommended.? I find I lose weight more easily if I do just a half hour to an hour of exercise a day. Good luck and don't get despondent.sunshine

Mamie Fri 01-Apr-16 18:34:54

I can only find one online with pistachio and apricot? No Sainsbury's here. grin

Anya Fri 01-Apr-16 18:42:33

Here's the recipe - I left out the coriander as I can't stand it.

Mamie Fri 01-Apr-16 18:53:31

Looks delicious - definitely our sort of thing. Love coriander, but quite hard to find here, we have to grow it!

Anya Fri 01-Apr-16 18:58:14

Enjoyed it so much just had to share it.

Mamie Fri 01-Apr-16 19:03:30

The original recipe is 500g of rice for 6 people - how can anyone eat that much? We have rice about once a month in a kedgeree and that is 50g between us.
Bizarre.

Mamie Fri 01-Apr-16 19:05:24

Plus 400g of chickpeas. shock

Pippa000 Sat 02-Apr-16 06:52:02

Hi Lazigirl, Cheese cake recipe to follow -
Make a base with Brazil nuts and almonds whizzed up to make a 'flour' like base enough to cover the bottom of a loose bottomed baking tin (mine was 6 inches as this was an experiment) add enough butter to make it all stick together.

Then mix full fat 200 gm cream cheese, three medium eggs, 100 ml ( approx) cream, a teaspoon of vanilla paste , grated lemon peel to taste, our lemons here are just off the tree and the size of a jaffa orange, so I used just one.

You will need to increase the amounts of ingredients if you use a bigger baking tin
Cook at 180 degrees for about 40 minutes, until it is set. I do leave it in the oven while it cools just to make sure, but my oven can be temperamental, rather like DH wink
The top should have been covered in sliced strawberries but I had eaten them.
Enjoy

Pippa000 Sat 02-Apr-16 07:12:02

Should be 300 gm cream cheese.

Mamie Sat 02-Apr-16 07:52:58

Thanks Pippa, that looks delicious. Not sure if I reported back that the chocolate mouse of melted chocolate and eggs worked really well. It was 30g of very dark chocolate and one egg each. Melt chocolate in bowl over simmering water (not touching) take off heat, stir egg yolks and add them, then add whipped egg whites. Put in fridge for a few hours.

Anya Sat 02-Apr-16 07:58:17

Those both sound lovely.

I fell off the carb-wagon resoundingly over Easter and have just climbed back on blush

Pippa000 Sat 02-Apr-16 09:57:21

Mamie, I love chocolate mousse (or mouse, whatever), but can't get it here in Cyprus, so will be trying your recipe, how long does it keep as DH is not really into chocolate, and I would feel awful grin if I had to eat two portions all by myself.

Lazigirl Sat 02-Apr-16 10:48:22

Thanks Pippa and Mamie for two delicious sounding puds. Your lemons sound amazing smile.

Pippa000 Sat 02-Apr-16 11:27:21

It is rather nice to walk out side and pick lemons and oranges, at least I know they are organic and HUGE

Mamie Sat 02-Apr-16 13:20:35

I think it will certainly keep a couple of days. You could just do one portion though? You just need to be careful melting the chocolate and then not letting it re-set before you put the egg in, but I had everything ready and to hand and it worked fine.
We had a lemon tree when we were in Spain in January and it was wonderful - don't think it would work in Normandy though!

shysal Sat 02-Apr-16 17:46:01

I tried a chocolate mousse recipe the other day which used a can of coconut milk, but with 100gm chocolate and 3 egg yolks the calorie count was enormous! It was delicious but I shan't make it again.

Mamie Sat 02-Apr-16 18:27:33

Are you on the Michael Mosley version Shysal? With LCHF you don't have to count calories at all. Having said that we only have puddings at Christmas, Easter, birthdays etc. grin

shysal Sat 02-Apr-16 19:47:54

I am vaguely on the MM, eating low calories on alternate days, low carb every day. Being rather half-hearted about it! I know on LCHF you don't count calories, but I can't lose weight that way. I don't normally eat puddings at all, but looking at recipes makes me want to try them!
All went to pot yesterday and today, as I was staying over at DD's to keep an eye on 3 GSs where they had made some chocolate brownies with the shell of the chocolate teapot I had given them for Easter. I think I ate 5 pieces and not much else!!! tbublush Fortunately I have a normal blood glucose level.

BBbevan Sun 03-Apr-16 15:31:25

My DiL has given me some Spirulina. It smells disgusting. She says it is useful in controlling blood sugar. Has anyone had experience of this ?

shysal Mon 04-Apr-16 09:49:58

It looks and sounds disgusting, BB! I don't think I could stomach it. Have you tried any yet?

BBbevan Mon 04-Apr-16 12:53:40

Yes I have Shysal. My DiL said sprinkle it on food, in a smoothie or mix in a drink. I was just about to have a diet Cola, so I put some in that. It bubbled and frothed like a witches brew and when I poured it down the sink the sink went dark green.
I bought some tablets the next daygrin
