Corned beef recipes please.

I have recently had a clear-out of my food cupboard and found about half the items were out of date! I want to use up a can of corned beef, dated April 2017, and am looking for something different from the usual hash. I thought about cutting it into large fingers and doing a toad-in-the-hole, or even a pie, but any other suggestions would be welcome, healthier if possible.

Bake a potato. Cut it in half and scoop out the flesh.
Mash it up with corned beef and a little tomato ketchup.
Put the mixture back in the skins. heat through, either straight away or later.

No suggestions, shysal but just wanted to thank you for (correctly) referring to it as corned beef, and not "corn" beef! grin

Hi shysal I usually put tin corned beef in a tomatoe sauce with onions and garlic then cook some macaroni pasta and put the corned beef sauce with the pasta put in 6 eggs and bake it s lovely ps grated cheese on top smile

I enjoy corned beef with creamy mash, beetroot and pickles. We use to have this as a children when we were hard up it made a cheap meal!!

This made me smile when we used to take the children to caravan parks for our hols they would plead for corned beef with instant mash (yes I know) and beans for the night we arrived.

It's lovely fried then put into an omelette. Serve with salad or chips or some nice french bread.Mmmm!

I will watch this thread. Usually for us it is just hash or corned beef and tomato pie.

I make a corned beef hash then cover with pastry or make pasties OH loves it.

I'm sending Dh round to see all of you. He loves corned beef but I hate it and, as I do the cooking, we don't ever have it!!

A favourite dish as a very small child in the late 1940 was a corned beef casserole made with corned beef, a tin of macedoine vegetables and an Oxo cube.

My father was stationed in India until 1948 and every month sent home a parcel of tinned food to every individual in the household. Tins of corned beef, macedoine vegetables, 'Vienna' sausages, butter, cream and Quality Street are among the contents of these parcels that I remember.

I notice that nobody thought I shouldn't be using out of date canned food. DD1 turned her nose up! It doesn't worry me in the least.

No, nor me. Tinned food found in Scott of the Antarctic's food stockpile in recent years has been opened and found to be perfectly safe and edible to eat .

I like corned beef in sandwiches or a bread roll. Slice of corner beef, sliced tomatoes, chutney of your choice. What could be better?

Hello everyone. First post.
Fry a chopped onion in a little oil until starting to go soft. Add shredded cabbage and a little water and saute until the cabbage is almost cooked. Add a chopped apple, some water and soy sauce and pepper to taste. Simmer for about 10 minutes then add a tin of chopped corned beef and cook for a few more minutes.
Lovely with crusty bread or a baked potato.

Reminded me of the corned beef fritters my Mum used to make too.
Other than sandwiches or with other meats/cheeses/pickles (mix up as my son calls it lol) we like it simply with chips and a fried egg.
Made into a pie similar to a pasty sounds nice.

My corned beef pie.
Sweat off some onions, Cube the corned beef. A tin of baked beans. A dash of Worcestershire sauce and salt/pepper.
Use this as a filling with short crust pastry.

Just thought - Could add some grated cheese.....

As we are on the subject of corned beef, I have noticed that tins bought in the last year or so contain beef that just disintegrates when trying to chop it.

Previously, I cut cut up the corned beef into proper chunks.

Anybody else found this ?

I usually chill it first, or it does tend to be difficult to cut properly.

Ooops, regarding my corned beef pie. Should have said..... add an egg to the filling, helps it all bind and cut well.

Second only to hash is corned beef salad; cut into cubes and mixed with finely chopped sweet onions, mayonnaise and a dash of oil, vinegar and black pepper. Eat with a big chunk of crusty bread or toss into a big bowl of mixed salad leaves.
